Eileen's Meatloaf

I am not a big meatloaf fan. I do not like the ketchup and stuff in the meatloaf. So I decided to try this. I thought the recipe was kind of bland, and my S.O. still put ketchup on his. Hah. Unfortunately, I had no onion soup mix, so i just put some onions in it. Perhaps this would have helped it be less bland. I might try this again, using the soup mix.

Quick and Easy Alfredo Sauce

This was a really good recipe! I made one small change, and that was putting one clove of minced garlic in the sauce instead of garlic powder (I love fresh garlic!). I also put in the Parmesan cheese after the cream cheese melted like one comment suggested. The sauce tasted cheesy and it was very good. My s.o. really liked the flavor and said ''it didn't taste like garlic!'' He hates canned/jarred Alfredo sauces because they just taste like garlic. I thought the butter (i used lactose free margarine) in the sauce was separating but after it cooked for a bit and i mixed it more it seemed to stay together just fine. It DOES however take MORE than 10 minutes to make, I thought. (but maybe that is because I was cooking everything else at the same time).

Layered Enchilada Bake

This was very good, but I made some changes. There is a ''cottage cheese chicken enchilada'' recipe on that site that is one of my new favorites, so I kind of mixed these two recipes together. I boiled and shredded some chicken for the meat mixture. I added minced garlic and taco season to the meat as well as the onion (after i boiled the chicken and shredded it, I mixed these ingredients in a skillet). Instead of just using sour cream, i mixed sour cream and cottage cheese and this was the layer I used for the top of the meat mixture. I left out the Italian dressing. I topped it with some sliced black olives and tomatoes. It was very good. My s.o. gave this four stars! I think I will be making this again for the 'rents as well. :)

Bacon Scalloped Potatoes

I usually don't like scalloped potatoes, but these were awesome! I took some advice I read in other comments and layered the bacon in with the potatoes and onions. I also sauteed some of the onions in the sauce and doubled the sauce amount layered that too. (I read that some people were complaining about potatoes not being cooked so I wanted to make sure everything was covered nicely so they would cook, and it worked!) I also added some mozzarella cheese in the sauce and layered it with the potatoes and onions as well. I also added pepper to the layers as well. To add some more flavor to the sauce I added a little bit of sour cream. These were absolutely wonderful, and I WILL be making them again!

Baked Chicken

Three Pepper Pilaf

I did not put mushrooms in because not everyone likes them. It was very good! I used these really great chicken tender pieces instead of breasts and they shred very nicely after being boiled. Could have maybe used a little more turmeric for I could only taste it sometimes. Next time I might leave out the green peppers, the green ones here tend to be really bitter. So other than the disappointing green peppers, this dish was great!

Cottage Cheese Chicken Enchiladas

These were VERY good!!! Where I live, they don't have canned enchilada sauce, so I ended up making my own (I used a non-tomato based enchilada sauce recipe from this site. the recipe is by Anna Marie). My sauce ended up a little thick, but it was delicious and worked VERY well with these enchiladas! I will definitely be making these again! Yum!

Pot Roast, Vegetables, and Beer

Left out tomato paste (didn't want to buy a can of it for one TBSP). Veggies got too soft. I used Karelian pot roast, which is actually chunks of pork and beef instead of a whole roast. It ended up more like a beef stew than a roast. However, the flavor was excellent. I dont think the flour quite thickend it enough. Will have to try this again cooking veggies less on stove. Or maybe not cook them on the stove at all, and just saute onion and garlic and then pour stock and beer and flour in to make the 'gravy' part. Then put veggies in, and meat, and put it in the oven.
