Great just as written. The only thing I did differently was make it with a little less chicken and added another pepper. Ounce for ounce it was the about the same as written though. Delicious!

Pumpkin Spice Protein Drink

This is the first time I've ever given 5 stars. This is great. Have made this twice. The first time, I had no dates so I used another sweetener instead (it was either honey or agave, I don't remember which) and, delicious! The second time I made it just as written. Awesome. The proportions are just right for the flavor and texture. Make this! Great way to get your veggies in at breakfast!

Kale and Quinoa with Creole Seasoning

This was pretty good! Will make again. I did add beans and some lemon juice, to brighten it up a bit and make it a meal. For those at a high altitude (we are always forgotten about when people write these recipes) the quinoa is always best cooked by increasing the liquid by a little less than 1/4 cup or so, and turning it to more like a "medium low" than a "low", when it comes time. Also, increase cooking time by a few minutes, for liquid to be adaquately absorbed. Oh, and I found it to be a bit salty as well. I would cut the salt in half and add a little more cajun seasoning.

Quinoa Muffins

This is a swell idea. I subbed sharp cheddar for the feta and omitted the thyme (thought my toddler would take to it better). I also added garlic powder. Seemed like a good one to double, and it was a good call, original recipe doesn't make a ton, and you definitely want your muffin tins more like 2/3 full. Great after 23 mins (high altitude). Best at room temp, just like with quiche. Thanks!

Cream of Asparagus Soup I

This was good. Used soymilk instead of cream and all broth, instead of the water, as I had no boullion. Worked fine this way, but didn't have the same oomph as it would have, had I used cream. Knowing this, I popped in some feta at the end. Also, added 4 or 5 garlic cloves, as it just wasnt super flavorful without it. Good recipe that can be tweaked to suit your tastes and what you have on hand.

Meatiest Vegetarian Chili From Your Slow Cooker

Followed the recipe exactly and it was good. I'd make it again. Thing is though, the reason I gave it only 4 stars is that there is no way this doesn't need some liquid. I added about a cup and a half of water at the end, upon discovering how not soupy at all it is. Not even stewy. Or you could just add the liquid with the beans and not drain them, if you can digest it. That'd be just about right.

Apple, Cranberry, and Pear Crisp

This was good, but needed a few changes. To make it healthier, use half the butter. A half cup is excessive, and it really doesn't need it. Used rolled oats, instead of quick cooking. It doesn't make a huge difference in the texture, and it's healthier. Also, I prefer leaving the skin on for better nutrition, if the texture bothers you (I don't think it's a big deal) leave the pears unpeeled, since they have thinner skin and won't be too bothersome texture wise and peel the apples. Also, so long as your fruit is nice and sweet, you really can cut the sugar and honey some. Also, adding cinnamon to food makes it TASTE sweeter without adding any actual sugar. Plus, this recipe really needs it. Cinnamon and a little ground ginger or its boring. I know. Tried both ways. It's lovely with some plain yogurt!

Naked Shrimp Pasta

My husband wasn't a fan of this. I thought it was alright. I did not use the bacon, added a couple pats of butter and used olive oil. I used a bit more of all the veggies and a bit less shrimp. I also added a few pine nuts. For the most part made it true to the recipe. Maybe it would be better with the bacon.
