Hot Artichoke Spinach Dip

this was a HIT at the party i took it to. my only deviation from the recipe was i didn't pulse the artichokes in a food processor...i just finely diced them.

delicious! received rave reviews at work (frosted a chocolate cake with this for a co-worker's birthday). I did add a little extra PB (maybe 2-3 Tbs), as i wanted it to taste extra peanut butter-y! several co-workers begged for the recipe... will definitely keep this recipe on hand!

Slow Cooker Beef and Mushrooms

This was yummy! I used fresh, sliced mushrooms, so I added enough beef broth to cover everything. I served it over egg noodles and it was a hit.

Chocolate Truffles

Very easy and yummy. I did 1/2 the batch with mint extract and rolled those in crushed candy canes and the other 1/2 with rum (YUM) and coconut. I thought the batter for the mint 1/2 was a little dry and crumbly, but they came together fine and didn't taste gritty. However, after taking a suggestion from another review, I whipped the rum batter and it is sooo much smoother (thanks for the tip! :) ) Over all a great recipe.

Chicken Satay

I don't really eat a lot of Thai food, so I can't really say if this has an authentic Thai flavor...but I think it's delicious! We make this sauce all the time, it's so easy. Last week, we made 8 servings, thinned it a little and had it over ww pasta...yummy.

Pot Roast in Foil

This was delicious. I wish I would have used two cans of soup so there had been more gravy. Instead of wrapping everything in foil I covered the 9x13 in foil and it worked just as well. I've always been wary of making pot roast becuase my mom's was never that tasty (sorry Mom, I love you anyway!). But this was so good and so simple.

Easy Key Lime Pie I

This pie was delicious! I just happened to find fresh key limes at my grocery store and the hardest part of this recipe was squeezing them (a whole pound) for the 1/2C of juice! I will make this again (and again) for sure!! :)
