Sweet and Sour Faux Meat Balls

Well I am bias since I do not eat meat. Still WOW. These are great just finish eating them 30 minutes ago. SO easy, So good. I made a Salisbury sauce instead and piped mashed garlic potatoes on top. My husband said this was a winner. YUM

Tater-Dipped Eggplant

This was such any easy and surprisingly quick.The potato flakes give it such a nice crispy taste. I made a big batch and put it in the freezer to take out for later. YUM!

Cottage Cheese Roast

Well as a non meater this is YUM. I leave out the nuts since the hubby doesn't like them. No people its not JUST like a meat loaf but it is good. I make a little catsup, brown sugar sauce for the top.

Basic Flaky Pie Crust

Quick, Easy, Yum. I just used this crust for a pecan pie. I put the 1/2 cup of shortning in the freezer. It was nice and cold so I cut up the floor and salt into it. Added the ice water and mixed lightly.I quickly roll the dough for small tarts and kept them in the freezer until I was ready to bake. This crust works great with the pecan filling. I will have to try this crust with pot pie.

Pumpkin Cream Cheese Muffins

I made these as a test for my in home daycare I will be starting. I am on the great muffin hunt. My 19 month old loved them. My 17 yr old cousin loved them. My 60 yr old dad loved them. I tried the cream cheese with out the egg and it made more like a cream cheese middle. I pushed it down inside some. I did add the extra seasonings and it worked I like the idea of a loaf will have to try that.

Apple Scones

I made this recipe but did not have apples so I used dried cranberries and pecans. very easy,quick and tasty. I am taking them to my father for brakefast along with his Sunday morning Starbucks coffee.
