Amazing Chicken

One of my very favorites. Agree with the others who spice up the breadcrumbs and/or mayo. Try cooking the breasts on a cooling rack (placed on a baking sheet) to get the undersides crispier. Yumm!!!

Fancy Fruit Pizza

This was fan-tas-tic! I made this for Easter over at a friend's home and everybody loved it- nobody even touched the other desserts there! I followed the recipe exactly but used blackberries and extra strawberries instead of the banana and pineapple. This will be my new "go to" dessert recipe!

Simply Divine Meat Loaf with Spinach

I enjoyed this recipe. I followed it exactly but also added some blue cheese as I had meatloaf with spinach and blue cheese in a restaurant once and LOVED it. Where I went wrong was I also added a cup of water (per my meatloaf seasoning mix packet instructions) and the meatloaf was just TOO moist. If I had left out the water it would have been divine (but that's my own fault!).

Pesto Polenta Lasagna

This recipe was great! I used the packaged polenta from Trader Joe's and also added some slices of eggplant as suggested by another reviewer. I browned the polenta before I put it in the pan and didn't find it to be too mushy- though with all the sauce and cheese I am not sure how crisp it could have been (I'm a beginner!). I will definitely make this again!

Black Bean and Couscous Salad

I really enjoyed this salad- though I didn't follow the recipe exactly. I subbed quinoa for couscous and added cucumber and green pepper in place of the corn. Will definitely make again!

Eggplant Parmesan I

I dream about this dish! I would make it a lot more only whenever I do, my boyfriend and I usually end up eating the whole thing in a day or two! I followed suggestions from other reviewers and recipes and dipped the eggplant in egg and breadcrumbs before browning.

Excellent soup and very easy. I always leave out the corn and sometimes add black beans in their place. I like to add chopped jalapeno for some kick.

Shepherd's Pie

This was fantastic!!!! I made this when I was sick with a cold and wanting some comfort food- it was so easy I was back on the couch in about 20 minutes! I used Simply Potatoes (the garlic kind) instead of the instant and also added a handful or two of shredded cheddar. My boyfriend says this is his new favorite- will definitely make again and again!!!

Country Apple Dumplings

These were great! A little mushy on the bottom but with the crispiness on top I would say it balanced it out great! I kind of liked them even better cold the next day with my coffee! I followed the suggestions of others by cutting down on the butter and sugar - and used diet soda. Still plenty sweet and delicious!
