Vietnamese Sandwich

We've made these sandwiches exactly as described several times, and the flavor combination is delicious! Only variation we've tried is using charcoal grilled, rather than broiled, porkchops and it's excellent too.

Lentil Bulgur Salad

Delicious! Made it just as the recipe says, but added some green pepper where it calls for green onion x 2 and only used about 3/4 C lentils since we ran out. Super easy -- definitely make it again!

Vegan Arepas Made with Polenta

I was skeptical of how these unique flavors would mesh, but everything complements everything else quite nicely! I made fresh polenta, which needed a few more minutes under the broiler. I had never broiled polenta before and the crispiness was fantastic! Makes for an interesting dish to serve skeptical crowds!

Fruited Tofu Curry Salad

Excellent mix of sweet, spicy and tangy. For crispy tofu, shake the tofu cubes in a bag of corn meal and a little cumin before pan frying in olive oil. We served the salad in pitas on lettuce. Delicious! Next time I'd go for a flatbread instead.

Delicious Ham and Potato Soup

This recipe has fantastic reviews, and there's nothing wrong with it, but it wasn't anything special. However, I do give it credit for being thick & creamy without using cream!

Spicy Rice Pilaf

We served this as a side dish for a group of 6 and finished it off. It was tasty despite the fact that we didn't have the pimientos. Recommend it as a quick, easy side!

Quinoa with Sweet Potato and Mushrooms

This is a tasty dish, but I agree with other reviewers who said it needs a little something extra. We added a dash of ground coriander but still felt like something was missing. The toasted pecans are a must!

Spinach and Leek White Bean Soup

We absolutely loved this dish. Made it just as the recipe states, but only used 3 leeks and included some of the stalks and not just the bulb. Delicious!
