Grilled Pork Loin Chops
Made this exactly as the directions stated, and loved it! I don't like ginger, but my husband does, so I left that in... was a bit nervous, but it was fine. My husband said he'd like just a little more heat next time, so thinking of maybe adding some red pepper flakes.

Chakchouka (Shakshouka)
I made this today, with a couple small changes due to what I had on hand. I only had green onions, so used those, and also used a whole red habanero instead of a chili pepper. I had a couple Morningstar veggie sausage patties I browned up and crumbled in it, too, and served it for lunch over ready-to-serve Italian Minute Rice. The only thing we decided I'd do differently is cook less time once the eggs are in, because we'd prefer a runnier yolk. Other than that, my husband and I both loved it!

Dijon Chicken Salad
Good stuff! I was a little afraid some of the ingredients would overwhelm the others, such as the celery or grapes, so I just made some very minor adjustments based on our tastes. I also omitted the honey and added about 1/4 C. of chopped pecans. Served it up on some nice wheat berry bread and it was a perfect blend of flavors!
