Grilled Tuna

Reviewed: Sep. 3, 2012
I made this tonight exactly as written. I had a 1 lb. steak from a freshly caught albacore. OMG was this ever delicious and so simple.

Blackened Seasoning Mix

Reviewed: Apr. 26, 2012
This is pretty good but I have to agree with the person who said it had an overpowering amount of Oregano. Next time I make it I'll use 1/2 tsp. Oregano instead of 1 tsp. I whirled this mixture in my mini processor until the herbs were finely ground and everything was well mixed.

One-Dish Rockfish

Reviewed: May 10, 2011
Thanks for posting this recipe. I wish I had followed it as written instead of listening to the reviewers who said it turned out soupy and didn't need the broth. About 2/3 of the way through the baking process I checked on the fish only to discover that the spinach was laying in a dry mat at the bottom of the dish. I added some broth at that time and rescued the meal but it would have been better if the broth had been in there to begin with. I used fresh baby spinach and I'm wondering if the reviewers who said it was soupy used frozen spinach? Anyway I will make it again but with the broth this time. :-) The only thing I changed was to use thyme instead of dill. I served it with rice pilaf and it was quite yummy.

Sweet and Savory Kale

Reviewed: May 24, 2010
I made this exactly according to directions, except I cut down on the sugar just a bit. I used fresh young kale straight out of my garden. My husband and I both really liked it and I'm planning to make it again.

Roquefort Pear Salad

Reviewed: Jan. 5, 2010
Love this salad and so do my friends. I took it to a potluck New Years Eve party. I changed it just a little. One of my friends is allergic to garlic so I omitted it. Omitted the avocado (couldn't find a ripe one). Used walnuts instead of pecans and dijon mustard. Everyone commented on how delicious it was. Thank you so much for sharing this Michelle.

Asian Chicken Noodle Salad

Reviewed: Jun. 24, 2008
I don't like crunchy noodles and we don't need the butter so I cooked 2 pkgs. of Ramen noodles per pkg instructions (no seasoning pak)and drained them. Used 1/4 cup EVOO, 1/4 c. water in place of 1/2 c. veg. oil, 1T. Sesame oil, scant 1/4 c. sugar, 1/4 c. sliced almonds. I used leftover Rotisserie chicken. Tossed it all together and it was lovely. I'll make it again. Thank you so much for sharing this with us.
