Classic Bran Muffins

We are really enjoy these. I have made them about 4 times now. I gave them 4 stars because it wasn't one of those things that I thought WOW! That's delicious when I took a bite. BUT still they are pretty good. My only problem is that I would like them to be a little more moist (even when I made the recipe with oil). I don't know if that is possible with bran muffins, but I will keep trying. I decided to start using applesauce instead of oil, but the slight dryness is there no matter what. I will continue to play with it to make it perfect for us. As of right now it is still pretty darn good! All my kids happily eat them in place of the sugary cereal that I know longer allow them to eat...that is all that matters!! :-)

Chocolate Covered Strawberries

It was easier than I thought! I used a bag of Dove milk chocolate. I didnt' use shortening. I turned off heat to melt the chocolate since it was a small amount. I heated 2/3 of the bag of chocolate until melted. Then I put in the other 1/3 to cool it down. The stawberries came out perfectly!! I was so nervous to make these, but it was easy and DELICIOUS! I still had some chocolate left over so I dipped some pretzel sticks I had on hand.....they were delicous too!

Best Beef Dip Ever

After all the rave reviews I was very excited to try this. Unfortunately, it did not meet expectations. I thought the soy sauce was a weird ingredient, but went with it as directed. For us it was way too over-powering. My family of 7 was so excited about this, and in the end not one person liked it.

Guacamole

This guacomole is wonderful!!! We like ours a little spicy so we add either more cayenne or a little chopped jalepeno. Either way....it is GREAT!!

San Francisco Style Bagels

This recipe is ok. I found another recipe that recommended broiling them for 2 min per side before boiling. It makes a huge difference in the quality of the bagel. The crust that is formed during broiling helps it hold up when boiling. I tried it both ways. Though both are edible, the one that was broiled first was much better!!

Broccoli and Cheddar Quiche

This was my first time making a quiche and it turned out pretty well. I didn't have Miracle Whip on hand so I had to use reg mayo. Other than that I followed the directions exactly and we all enjoyed it. I have one child that will not eat eggs, but she ate every bite of this. Thanks for the recipe!

Sarah's Applesauce

This is delicious. I made it exactly as stated. It was a little watery at first, but I threw it in the food processor and it came out perfect! The whole family loves it. They all said it was much better than the jar stuff. I have even been using it to replace oil in the bran muffin recipe I got off this site! YUM! Thanks for the great recipe!

Chicken Stir-Fry

This was better than even I expected. I made almost exactly as directed. My only changes were fresh ginger and garlic....and napa cabbage instead of celery. My whole family really liked it. I have never made a stir-fry that everyone liked. They especially raved about how good the chicken tasted. I will use less water next time....it was a little too much for me. But it is a keeper. Thanks for sharing.

Sweet, Sticky and Spicy Chicken

YUM!!! This was so delicious. My family raved about it and begged me to make it once a week. I added a little corn starch to my chicken before frying just because of other reviews. That is the ONLY change. For the hot sauce I did use the siriachi (I forget how to spell it) or rooster sauce as some call it. I do believe that made a big difference in the taste. I don't think regular hot sauce would be as good. We had very sweet, very sticky, very spicy, and VERY delicious chicken. Thanks so much for sharing this recipe!

Chicken Pot Pie IX

Wow!! That is all I can say. Everyone loved this....even my pickiest little eater. I didn't have the problem with it being too dry like others did. I like mine with plenty of sauce and it was perfect. It acutally almost overflowed out of the pie pan. I was in a hurry and happen to have some frozen mixed veggies on hand so I used 2 1/2 cups of those instead of cutting up the other stuff, but everything else I did exactly as directed and LOVED IT!! After trying so many chicken pot pie recipes I finally found what we were looking for. Thank you so much for sharing this recipe!

Sauteed Garlic Asparagus

We really loved this asparagus. I love asparagus any way, but my husband does not. He said this was the best asparagus he had ever eaten. Even my picky 12yr old ate it, but he says he likes it a little saltier. :-) We will definitely having this again.

Wonderful Waffles

The texture of these waffles is great! I followed the directions exactly as written. They were nice and fluffy and moist. The taste is lacking a little though. I don't normally eat syrup on my waffles, but I did feel I needed it with these. I made another batch and added blueberries. Those turned out pretty well too. Thanks for the recipe!

Quinoa Side Dish

It is probably just personal taste but we did not care for this. Initailly, I used chicken broth to cook it in and it tasted great. So I was really excited to add in all the other ingredients and see how much better it would be. Unfortunately, I was disappointed. Even though we do NOT eat bland food EVER, we felt like this was better with just the broth. Maybe it would have been better if the other ingredients had cooked in it for a few minutes. The taste of the dish was just not our thing.

Basil Chicken over Angel Hair

Wow! I loved this!! I did only one thing not listed in this recipe....I cut the chicken before breading. Outside of that I followed to the letter and it was amazing!! It tasted so authentic to me. I will definitely be making this again! Thanks so much for sharing this recipe!

Creamy Pesto Shrimp

I was looking for a creamy pesto sauce and this was perfect!! I didn't and wouldn't change a thing! I used an Emeril Lagasse recipe for pesto (Pesto alla Genovese). One of my sons HATES pesto, but I had him try this and he devoured it. My husband is kind of so-so when it comes to pesto. He also loved it and had seconds! We will definitely be having this again! Thank you so much for sharing this recipe.

Chicken Florentine Casserole

This was delicious! I didn't think it was really something my husband would like, but he did. He was even shocked how much he liked it. It was very easy to make on tope of it! It was a little too much sauce. I couldn't use it all. I did follow reviews and only cook chicken once, on top of spinach. Though it isn't exactly a kid friendly dish all of my kids did like it.....with the exception of the mushrooms. :-) We will definitely be making this again.

Fluffy Pancakes

These pancakes are delicious. I have used this recipe with both buttermilk (when I was out of milk, but had buttermilk left over from something else) and with the soured milk. They are just delicious no matter what!

Apple Muffins

These were pretty good. The batter looked a little dry so we added more apple juice. I think I will replace oil with applesauce next time. I hope that will make them a little more moist and apple tasting. Overall they weren't too bad. Definitely a good place for someone like me, who doesn't bake often, to start and a just adjust to personal taste.

Pesto Pasta with Chicken

This was pretty good. Everyone seemed to enjoy it. I gave 5 starts because I think it would be outstanding if you don't use whole wheat penne pasta like I didn (it was what I had on hand). I did use homemade pesto (emmerill lagasse recipe). It definitely made the difference. It didn't add too much to prep time and was definitely worth it. I had been looking for a recipe like this for a while. Thanks.
