Stuffed Green Peppers I

These are ok. I have made them twice. The first time I follwed the recipe exactly and my husband loved them with the exception of the worcestershire sauce(He doens't like that stuff). He prefered the inside because it was a little drier. The next time I only used one can of soup and mixed some of it in with the meat. I also added some seasoning because I thought the first time was a little bland. So it definitely would be if I left out the Worcestershire sauce. Everyone liked it....my kids loved it much more the second time....as did I. My husband liked the taste better, but still prefered it drier like the first time. So I guess it is all a matter of opinion. Oh, you do only need one can of soup...2 is definitely too much. If you don't mind the peeling, buy diced tomatoes. I add a lot more cheese, because everybody loves more cheese.

Creamy Pesto Shrimp

I was looking for a creamy pesto sauce and this was perfect!! I didn't and wouldn't change a thing! I used an Emeril Lagasse recipe for pesto (Pesto alla Genovese). One of my sons HATES pesto, but I had him try this and he devoured it. My husband is kind of so-so when it comes to pesto. He also loved it and had seconds! We will definitely be having this again! Thank you so much for sharing this recipe.

Chicken Florentine Casserole

This was delicious! I didn't think it was really something my husband would like, but he did. He was even shocked how much he liked it. It was very easy to make on tope of it! It was a little too much sauce. I couldn't use it all. I did follow reviews and only cook chicken once, on top of spinach. Though it isn't exactly a kid friendly dish all of my kids did like it.....with the exception of the mushrooms. :-) We will definitely be making this again.

Chicken Pot Pie IX

Wow!! That is all I can say. Everyone loved this....even my pickiest little eater. I didn't have the problem with it being too dry like others did. I like mine with plenty of sauce and it was perfect. It acutally almost overflowed out of the pie pan. I was in a hurry and happen to have some frozen mixed veggies on hand so I used 2 1/2 cups of those instead of cutting up the other stuff, but everything else I did exactly as directed and LOVED IT!! After trying so many chicken pot pie recipes I finally found what we were looking for. Thank you so much for sharing this recipe!

Chicken Stir-Fry

This was better than even I expected. I made almost exactly as directed. My only changes were fresh ginger and garlic....and napa cabbage instead of celery. My whole family really liked it. I have never made a stir-fry that everyone liked. They especially raved about how good the chicken tasted. I will use less water next time....it was a little too much for me. But it is a keeper. Thanks for sharing.

Fluffy Pancakes

These pancakes are delicious. I have used this recipe with both buttermilk (when I was out of milk, but had buttermilk left over from something else) and with the soured milk. They are just delicious no matter what!

Apple Muffins

These were pretty good. The batter looked a little dry so we added more apple juice. I think I will replace oil with applesauce next time. I hope that will make them a little more moist and apple tasting. Overall they weren't too bad. Definitely a good place for someone like me, who doesn't bake often, to start and a just adjust to personal taste.

Best Beef Dip Ever

After all the rave reviews I was very excited to try this. Unfortunately, it did not meet expectations. I thought the soy sauce was a weird ingredient, but went with it as directed. For us it was way too over-powering. My family of 7 was so excited about this, and in the end not one person liked it.

Roast Sticky Chicken-Rotisserie Style

To me this was ok. I was a little disappointed after the rave reviews. It was nothing like the rotisserie chickens we are use to eating. The seasoning smelled great at first, but got to be a little strong after a while ( which is surprising because I love seasoning!!). I cooked to a temp of 170. Breasts were done perfectly, but legs were over done. I did consider covering them with foil for a while, but decided to stick strictly to directions to make sure it turned out just as it should.

Cheesy Chicken Meatballs

At first I was disappointed because they were gooey and not forming into meatballs. Then I read the reviews again and realized I missed the one where the person that posted this recipe had edited it. So I shaped them the best I could and cooked them. Even with the mistakes they still tasted great! Everyone loved them. I have such a hard time eating ground chicken and turkey, but not these. There was a battle of who got the last one!! I can't wait to make them again....the correct way!!

Pesto Pasta with Chicken

This was pretty good. Everyone seemed to enjoy it. I gave 5 starts because I think it would be outstanding if you don't use whole wheat penne pasta like I didn (it was what I had on hand). I did use homemade pesto (emmerill lagasse recipe). It definitely made the difference. It didn't add too much to prep time and was definitely worth it. I had been looking for a recipe like this for a while. Thanks.

Lime Chicken Soft Tacos

Ok, I normally don't like when other peole do this. I usually try a recipe exactly as stated first so I can rate it accurately. However, I didn't this time. It was so good, though that I wanted to rate it anyway. I threw it in the crock pot instead of pan, replaced green onion with green chilies and shredded instead of cubed. Minor changes, it came out so good!! Everyone loved it. With a family of 6 it is hard to find something healthy that everyone likes.....this was one of those rare meals. It was great!!!

Homemade Black Bean Veggie Burgers

Wow!! I made these exactly as the recipe said and they were delicious!! When I was getting the onion/pepper mix out of the processor I did press each spoonful against the side to squeeze out any extra juice. Other than that I did nothing special to make them stick together, and I had no problems with them falling apart. They were perfect!!
