Crab-Stuffed Filet Mignon with Whiskey Peppercorn Sauce

I used rum instead of whisky for taste preference, so this likely could have been a 4 star recipe if I had used the whisky instead (taste might have become palatable with cooking - who knows?) It was quite tasty overall, but not as good as I was expecting. With all the work involved, I probably won't make this recipe again. Perhaps some alterations, such adding the mustard right at the end to keep the flavour sharp, or making a sauce with lump crab meat and serving it on top of steak. And more flavour in the sauce.

Blackened Shrimp Stroganoff

Very tasty! I found it to be lacking slightly even though I doubled the Cajun seasoning and added a little garlic to the shrimp. Forgot the capers so that could have been my fault! Next time I'll add a little Dijon mustard just prior to serving. This would also be good with mixed seafood and/or chicken.

Eggs Benedict Casserole

Four stars because while the dish was very good, I made my own hollandaise. I'd rather set myself on fire than choke down hollandaise from a packet.

Pork Medallions Alfredo

Absolutely LOVED this recipe! I soaked some dried thyme in oil for about an hour and then used that to fry the pork, and I left out the basil as I didn't have any. The parmesan cheese was a little overpowering; I recommend using about half of the suggested amount. The end result, even with a little too much cheese, was delicious! Would definitely make again.

Filet Mignon with Bacon Cream Sauce

I used a maple bacon for this recipe (and more than is called for - mmm, bacon) and it turned out absolutely delicious. Will definitely make again!
