Chef John's Macaroni and Cheese

Reviewed: May 5, 2012
I think this serves as a good base recipe, but I made several adjustments. Firstly I only used 12 oz of pasta. I omitted the cayenne, white pepper and nutmeg. The seasonings I used were a pinch of thyme, 1 T of chili powder, 1 T of garlic powder, dash of oregeno, 1 1/2 t of salt, a pinch of black pepper, and 1 t of red pepper flakes. I also used 4 c of milk, 1/2 c butter, and 4 c of cheese. With the breadcrumbs at the end, I used 1 c of breadcrumbs and 3 T of butter. I also added 2 pieces of crumbled bacon to the mix at the end before baking. The finished product came out well, but I think if I had not added the extra milk, cheese, and butter it would have been very dry. I may even add a little more next time. Hope this helps!

Chicken Salad

Reviewed: Jun. 14, 2012
This is a great base recipe for chicken salad. I used 1/2 c red grapes instead of green, omitted the ginger, swapped 1/2 c green onions for the white, and added a clove of garlic. It turned out great!

Carrie's Artichoke and Sun-Dried Tomato Pasta

Reviewed: Jul. 11, 2012
This was a great recipe! I added shrimp to mine in the last few minutes. I also substituted linguini pasta for fettucini. I didn't use the wine, but used chicken broth instead and the flavor was still great. I also doubled the garlic. : )

Apple Pie by Grandma Ople

Reviewed: Jul. 16, 2012
This was a great recipe! I took some other reviewers suggestions when making it. I only used 6 Granny Smith apples and even those were hard to fit in. I also only baked it at 425 for 5 minutes or so and then baked at 350 for 50 minutes. I added 1 tsp vanilla and 1 tsp cinnamon to the liquid. I also mixed the apples and liquid together before putting the apples in the pie crust. I poured the remaining liquid over the apples. I did a lattice crush and brushed it with an egg/cinnamon/sugar wash. It turned out great!

OREO® Triple Layer Chocolate Pie

Reviewed: Jul. 16, 2012
This was delicious! I did exactly as the recipe said except I used a little less Cool Whip on top. Next time I might just buy a premade Oreo crust to save on the prep time.

Slow Cooker Texas Pulled Pork

Reviewed: Jul. 16, 2012
This was delicious! I took some other people's suggestions and used 1 1/2 c bbq sauce, 2 T mustard, 2 T Worcestershire, 1 1/2 T chili powder, 1/2 t thyme, and 5 cloves of garlic. It came out really well. My advice is to let it cool if you can to scrape the grease off.

Oven Baked Garlic and Parmesan Fries

Reviewed: Oct. 27, 2012
These were so yummy! I substituted a little oregano for the thyme and used a decent sprinkle of dried parsley instead of fresh. I added garlic salt too. I also left them in the oven a couple minutes longer to get a nice crisp (but I have an older oven). Thanks for the recipe!!

Quick and Easy Chicken Noodle Soup

Reviewed: Nov. 14, 2012
This is a good basic recipe. Nothing special. I upped all the seasonings and veggies on the advice of some of the other reviewers and also added extra noodles. If I hadn't I think it would have been mostly broth.

Apple Crisp II

Reviewed: Jan. 3, 2013
I made a half batch of this recipe, but made the original size amount of crust. The flavor on this was just so so for me. Kind of bland. Next time I'll up the brown sugar and cinnamon and add vanilla. I only used 1/8 cup of water and that seemed to work fine. It was ok, but I'll definitely increase the seasonings for next time.

Provincial Tomatoes

Reviewed: Jun. 5, 2013
I made this recipe (half) as a side dish. It was a nice change of pace, but I made some changes. I added fresh garlic, basil, and a dash of oregano. I didn't have Asiago so I subbed mozzarella for it. After 4 min in the broiler the mozz. got dark and crispy, so maybe if you're using mozz. adjust the cook time. Nothing out of this world, but a nice little side.

Carla's Fruit Dip

Reviewed: Jul. 7, 2013
This was a great dip. I took a lot of the other reviewers' suggestions. I used 8oz of cream cheese and it was the perfect consistency. Following another reviewer's advice, I beat/added the ingredients in the following order: cream cheese(softened), marshmallow creme (a little melted), and cool whip (not quite the whole container). I had no lumps and it was a perfect consistency for sticking to fruit. I also added about 2 T of orange juice, 1 T of cinnamon, and 1 T of vanilla extract. I took it to a baby shower and everyone had many servings of it. This recipe makes plenty. Enough for many servings for 20-25 people I'd say. I also used low fat or fat free everything and it tasted great.

Jeff's Chili Con Queso

Reviewed: Jul. 7, 2013
I heavily edited this recipe based on other reviewers' suggestions, but it was a really helpful base to start from. I used a jar of plain queso from the store (15oz), about 1/4 c cubed colby cheese, and I substituted a can of tomatoes with chiles for the salsa. I also added chopped jalapenos, and a couple dashes more of Tabasco. I use the entire can of chili as well. I just put all the ingredients in a bowl and stuck it in the microwave. It turned out really great though, and I'll use this recipe every time in the future.
