The Best Fresh Tomato Salsa
Super easy and tasty! I didn't use cumin because I'm not a fan, and no bell pepper because I didn't have one on hand. It came out great...reminds me of the "On The Border" homemade salsa. Yummy!

Spaghetti Sauce II
This recipe garnered my first "sauce compliment" from my Italian husband. He ALWAYS makes our sauce...20 years and running...and it's amazing but he won't tell me his recipe! Not even his mom knows. However, for once, I wanted to attempt a sauce that he would give his stamp of approval and this one did. I used this along with the baked spaghetti recipe from this sight. It's a very hearty recipe with just the right amount of spice.

Chantal's New York Cheesecake
I followed the directions and it came out perfect. Mine stayed in the oven about 3 1/2 hours after I turned it off. And I used the water bath to keep it from cracking, double wrapped the springform pan in tinfoil as suggested. The only two changes I would make is perhaps a tad more sugar, though my family didn't agree. Plus I would place a piece of tin foil loosely on top of the pan about an hour after the oven was shut off to prevent further browning. It looked great just a bit golden on the outer edges that I would have preferred not to have but that's just me being picky. I made a strawberry sauce and served that along with hot fudge sauce and caramel sauce for topping options. The purists ate it with nothing on top and raved! A perfect go-to cheesecake recipe and very simple.
