BBQ Country Style Ribs

Reviewed: Feb. 28, 2013
Yummy, I rubbed with minced garlic and ground pepper and wrapped in foil, baked at 250 for 2 hr 20 min, unwrapped foil and slathered on BBQ sauce, baked at 425 for 30 min. Ribs could have been a little more tender, I think I should have baked it longer at 250 and applying a more complex dry rub recipe produces tastier results.

Eggplant Croquettes

Reviewed: Feb. 27, 2013
4 and a half stars, using Japanese eggplant. Salted and sweated them first for 25 min and then roasted for 25 min w/ EVOO drizzle at 350 before proceeding. I was shocked that my two picky toddlers liked these! I had made roast chicken too, thinking they wouldn't eat these and they ate the croquettes instead of the chicken. Kids are so unpredictable! :) Anyway, it's a very good way to get vegetables in your kids. :)

Double Tomato Bruschetta

Reviewed: Feb. 27, 2013
So much more flavorful than other bruschettas I've made before due to the addition of the sun-dried tomatoes. Delicious!

Grandma's Lemon Meringue Pie

Reviewed: Feb. 22, 2013
I am a frequent baker, and this is the first meringue pie that I've ever made that wept! I got a watery layer between my meringue and my filling that I had to pour out after it cooled for a little bit. The flavor was otherwise spot-on, just as you would expect from a lemon meringue. I also used 1/2 c juice and zest from 1 lemon. I'll give it 4 stars on taste but I think I'll stick to my usual lemon meringue recipe next time since my usual recipe doesn't weep.

Chicken Milano

Reviewed: Feb. 22, 2013
Yum! I liked this a lot. I made it with orzo instead of fettucini but otherwise made this recipe exactly as directed. I'll be adding it to the rotation, thanks for sharing!

Homemade Wonton Soup

Reviewed: Feb. 20, 2013
I did not change any ingredients in the recipe, the only thing I did differently was to boil the wontons in water before adding to chicken broth as the other reviewers suggested. The soup had a nice taste but seemed a little lacking in flavor to me, felt like it needed something to put it over the top (MSG?), the soup I buy from restaurants seems more tasty.

Addictive Sweet Potato Burritos

Reviewed: Feb. 18, 2013
These are definitely interesting. I think I do like them but the flavor combination is very unusual. My husband didn't quite know what to make of them, either. My two preschoolers did not like them. I probably will not make this recipe again.

Mexican Corn on the Cob (Elote)

Reviewed: Feb. 15, 2013
My husband and 2 toddlers LOVED these. I oven-roasted the corn in their husks at 350 for 25 minutes because I am too lazy to grill. I sprinkled my hubby's with hot chili pepper but gave my 2 preschoolers the corn without chili. All loved it and went back for seconds. 5 stars!

Giant Chocolate Chip Cookie

Reviewed: Feb. 15, 2013
Just like a pizookie, served warm with vanilla ice cream. YUM. So easy to make and so delicious. I halved the recipe and baked it in a greased 9" cake pan and it came out great, crispy on the edges and chewy in the middle. I baked mine for 20 min.

Creamy Au Gratin Potatoes

Reviewed: Feb. 15, 2013
These were very good. I made 1.5x the amount of sauce per other reviewers' comments but will try it the regular way next time since they ended up very saucy. Tasty with bacon crumbled on top.

White Cheese Chicken Lasagna

Reviewed: Feb. 14, 2013
Pretty good. I halved the recipe and put it in a 8x8 but made no other changes. My hubby liked it, I thought it was just OK, and both of my picky eaters (preschoolers) ate a little bit, which I didn't think they would because they normally don't like spinach. I personally prefer a standard tomato-based lasagna but I'm giving it 4 stars based on my hubby's and kids' opinions.

French Pastry Pie Crust

Reviewed: Feb. 13, 2013
Yum, this was amazing, I'll definitely make it again, I used it for an apple pie and used half shortening and half butter for the fats. My usual recipe is just as yummy but more difficult to roll out and has more shrinkage. This will be my new go-to pie crust recipe. Thanks!!!

Apple Crumb Pie

Reviewed: Feb. 13, 2013
I followed the recipe exactly as directed, and liked how the filling turned out (not runny, flavorful), but I didn't like the crumb topping. I think it made the pie excessively sweet, and that is the first time I've ever said that about any apple pie. I'd only make this recipe again as a standard two-crust lattice pie.

Tasty Tuna Burgers

Reviewed: Feb. 11, 2013
They were OK, kind of like crab cakes. Unfortunately neither of my toddlers ate more than a bite of the burgers, they only ate the buns. :( I don't think I'll be making this again.

S'mores Pops

Reviewed: Feb. 8, 2013
Super easy to make, my 3-year old and 5-year old made these themselves while I was making tortillas. Tastes yummy too. 5 stars for being super quick and easy to assemble.

Broccoli and Cauliflower Casserole

Reviewed: Feb. 7, 2013
Pretty good! Three of us (myself, hubby, and toddler son) liked it, one (toddler daughter) did not. I omitted the rice, reduced the milk, and increased the cheese until the consistency looked right. I prefer the "roasted garlic cauliflower" recipe on this site, but this is a nice alternative.

Hawaiian Bread I

Reviewed: Feb. 5, 2013
Yummy, but doesn't taste like King's Hawaiian. Don't sub vanilla extract for coconut extract, tastes like something is missing w/ vanilla. Second time, I made it as directed, except using 1 1/4 c. pineapple and juice, no wet milk, and 2T. dry milk, it was moist and delicious. Edited 3/19/13: Added 1 tsp sweet buttery dough flavor and it overflowed the pan! Surprised that 1 extra tsp liquid could do this! Suggest placing a baking sheet under your loaf pan if you're baking in the oven just in case (I see others have had problems with overflowing too, even w/o any extra liquid).

Honey Roasted Red Potatoes

Reviewed: Feb. 1, 2013
These were pretty good. I baked for an hour (covered with foil for 40 minutes and without foil for the last 20 minutes). I should have given them a quick broil at the end like the other reviews suggested, I think that would have bumped it up from a 3.5 star dish to a 4 star dish.
