Very nice and easy recipe. I like that it uses vegetable oil. I find it easier to make the dough with only 3 cups of flour. I add slivered almonds to this recipe and then have made other variations. Orange cranberry is a good. I line a jelly roll pan with parchment paper and form one long rectangle so I only have two ends. Overall a real keeper and very flexible. Thanks!

Cinnamon Raisin Swirl Bread

Here is a tip on how to make this bread totally in the bread machine. Make dough using your regular cycle. About 5 minutes after the dough is done kneading, take the dough out and stretch the dough out on a floured board to about 9" x 13". Sprinkle liberally with cinnamon and about 3 T sugar (I don't use butter) and roll up from the short end. Place the roll back in the bread machine and let it go through the rest of the cycle. Nothing smells better!

Speedy Homemade Salsa

Very easy, very fast, and very good. The recipe is very basic and a keeper. It is easy to make adjustments to suit your family. I use canned diced tomatoes, two jalapenos, whatever onions I happen to have.

Bar-B-Que Sauce

Terrific recipe! My husband even thought it was the best BBQ sauce I have ever made. I had all the ingredients on hand and followed the recipe exactly. My only recommendation is to double the recipe and keep some in the refrigerator.

Italian Style Sausage

This is a very tasty sausage. I don't care for anise and substituted fennel seed. Since we had butchered a whole hog, I had the butcher prepare the fresh ground pork, and I made 10 lbs. of this recipe and froze it. Thanks, Lee, for this recipe and the one for breakfast sausage.

Breakfast Sausage

We bought a 4H hog and had it butchered locally. This year I asked that they not freeze the ground pork, and I made my own sausage. I made 18 pounds of this recipe, not changing a thing. It is very very nice. Next time I might substitute cayenne papper for the red pepper flakes so that flavor is more evenly distributed.

Eggplant and Zucchini Casserole

I have made this recipe several times and really like it. It is a great side dish or main dish for lunch. It does make quite a lot but is good as a leftover.

Mrs Espy's Enchilada Sauce

The consistancy and appearance of this sauce is almost identical to what you find in the canned sauce, and tastes every bit as good or better. The flavor is going to depend on what you use for "chili powder". Many commercial products add spices to ground chili and chiles vary in taste and heat. I used pure ground chili (chile rojo) found in the Mexican section. Be prepared to experiment a little. I added 2 tsp. of sugar as I thought the flavor of mine was a little bitter.
