Best Spanish Rice

Finally -- a recipe for Spanish rice that tastes just like the stuff we love at our favorite Mexican restaurants! I've tried lots of recipes and boxed brands, but this is by far the most easy and delicious!

Bisquick® Blueberry Muffins

These are the muffins my mom always made and I was thrilled to find the recipe, since it isn't printed on the Bisquick box any more. I always double the blueberries. Moist, delicious. Love these muffins!

Eggplant Parmesan II

Fantastic! I only gave it 4/5 stars because did modify it, based on other reviews. I sweated the eggplant for 20 minutes before dredging. I used panko seasoned with salt, garlic, and italian herbs rather than bread crumbs. I baked the eggplant 10 min. per side rather than 5. Two eggplant was more than enough. My entire family - including my very picky 3-year-old raved about it. And we had so little guilt with no frying and no meat!

Kalamata Olive Tapenade

Irish Beef Stew

Chocolate Chip Pumpkin Cookies

I've been making pumpkin chocolate chip cookies for years and my kids beg for them. But I lost my recipe, so I tried this one. It was really very good. I used butter because I didn't have shortening, and I used pumpkin pie spice instead of the cinnamon and nutmeg. I still think it needs more spice flavor, so next time I'll use a tablespoon of pumpkin pie spice. Otherwise, excellent!

Thanksgiving Leftover Casserole

With a few additions, FANTASTIC! It was so cool to have a recipe that not only used up the extra turkey I had, but also the potatoes and stuffing! Because of other reviewers comments I also sauteed some onions and minced garlic in the butter before adding the flour. I also used leftover prepared stuffing rather than dry and it was YUMMY! I probably tripled the amount of turkey and it still turned out perfectly. I even messed up and put the stuffing down before the potatoes, so the potatoes were on the top, but it still tasted great. I also added in some chopped up leftover broccoli, just sprinkled on top of the turkey. My picky eaters (ages 11, 8, and 4) also commented on how tasty it was. I'm definitely keeping this recipe for future Thanksgiving leftovers. Thank you!!!

Best Peach Cobbler Ever

Very good. I'm sure that mine was runny because I was using peaches I froze myself, and I had no idea how much of the liquid to include. I probably should have drained more of it off. This is a delicious recipe that everyone loved, despite the runny texture.

Greek Chicken Pasta

After reading a lot of the reviews that made changes on this recipe, I was a little worried. But I had a giant jar of artichoke hearts to use up, so I figured I'd try it. I am so glad I did! This was delicious. The only thing I did differently was throwing in an extra tomato because I had it. Between the lemon and the artichoke hearts and the feta, I have a hard time understanding how this could be bland. I actually forgot to put in the oregano, and still felt it had great flavor. Maybe if you used plain artichoke hearts instead of marinated, it would be bland. At any rate, the whole family really liked this, and even the pickiest of the kids said it was really good. We'll be making this again. YUM!

Roasted Balsamic Cauliflower

Delicious! Steaming cauliflower has never produced a great flavor. This recipe did the trick! I added another tablespoon each of the vinegar and oil, and a little more salt. I marinated it for 2 hours in a large ziploc bag. I cooked it 25 minutes and it came out just right. Thanks!

Death By Chocolate IV

I made this last year for Thanksgiving and everyone LOVED it. It feeds a huge crowd and is just delicious. Plus it looks so beautiful and fancy in the trifle bowl. I'm making it again this year!
