Comforting Chicken

Reviewed: Aug. 25, 2011
I really enjoyed this recipe. The flavors work very well together and is very "comforting" as said. I have a couple things I did/would do: 1) I used all ready cooked chicken that I had left over and saved and it still turned out great! 2) Add extra water to the chicken before baking. Didn't quite have enough in there to cook my rice all the way. I used brown rice so that could be why. Other then than... wonderful!

Quinoa and Black Beans

Reviewed: Jan. 2, 2012
I absolutely loved this recipe! Made only a couple adjustments: used 1 can of beans as 2 seemed too much. I also reduced the cayenne down to 1/8 teaspoon so it wouldn't be too much for the young kids. Tried quinoa for the fist time over Christmas and now I am wondering why I hadn't heard of it before! Love it! Low in calories and no cholesterol!

Chicken Paprikash

Reviewed: Oct. 11, 2011
I loved this! I have never made dumplings before, so I may have to get the hang of making them a little better. One thing to do is make sure you make the dough small when dropping into water and also cook it longer then 10 minutes. Mine didn't quite get done all the way through. Maybe I should not have added all the flour so it wasn't as stiff as a dough? Despite that it was fabulous!

Lentil and Sausage Soup

Reviewed: Jan. 12, 2012
This is a very tasty and light soup! I did not have lentils only but used a mixed dry bean and used about 10 oz of those. Only used 6 cups of water too and if it seems too watery for you add a can of tomato sauce with 1 tablespoon sugar to take to tomato edge off. Great soup and flavors!

Really enjoyed this recipe. Only used a different cheese b/c I had it on hand. I love chicken parm., and this is different. I think I like it more. It is a lot lighter meal to have and very tasty.

Chicken Biscuit Pie

Reviewed: Jul. 19, 2011
I love this recipe! I cooked my whole chicken in the crockpot all day with onions and carrots and use the broth, carrots and onions in the recipe. I also add a couple pinches of rosemarry and garlic powder. It is divine! I would recommend following the advice of lowering the temperature to 350 or 375 for 40 minutes. Biscuits will turn out perfect this way.

Real Italian Calzones

Reviewed: Sep. 29, 2011
I enjoyed this recipe very much. I do make this recipe into 6 or 8 small calzones instead. I also add a little parmesan cheese and garlic salt on top before baking to add a little someting. I have also used sausage and pepperoni combo and a ham and cheese inside and it is very tasty! Great for sending with kids for a school lunch.

I thought this recipe was good. Did use 1/2 lb of pasta like someone recommended. Used some half n half to add more liquid to the mixture before baking so it wouldn't dry out.

Lemon Mustard Chicken

Reviewed: Jul. 19, 2011
Recipe wasn't too bad. The flavors of mustard and lemone and lime juice was nice but it doesn't get into the chicken much. Would probably marinade it for longer to increase the flavor of the chicken. Over all not bad.

Chocolate Frozen Yogurt

Reviewed: Jan. 2, 2012
I would skip the chocolate chips and just use a good cocoa. The choc chips make it taste funny, unless you are using a good quality chocolate. Definetely cut the sugar down to 1/2 cup. It was sweet enough. I used vanilla yogurt and thought about skipping the vanilla, but after tasting it, I decided to add the vanilla. It helped tone down the tanginess of the yogurt taste. Probably won't use this recipe again, but it was fun trying this as a first. Maybe once I make more icecream I can try it again once I see what works. Est and what doesn't. Great recipe if you just want a little bit of icecream.
