These were great! I omitted the onions and used Sargento's reduced fat 4 cheese Mexican, and fat free cream cheese; fried in canola oil. Very tasty and easy to make!!!!

We liked these. I had to add a lot more cheese and more seasoning (extra chili powder and some fajita seasoning I had on hand)so it wasn't so bland. Next time I will use the whole can of enchilada sauce instead of the amount specified in the recipe.
