Curried Chicken
Big hit with my family! I added red bell pepper, mushrooms,and fresh garlic. I will definitely make this again.

Slow Cooker Enchiladas
I loved it! Modified it quite a bit, but I will make it again using a similar version to this one. I just have to use more vegetables than what is called for. First of all, I used lean ground turkey instead of beef. I did not use any soup, I used canned enchilada sauce. I added chopped spinach, drained black beans, drained diced tomatoes and plenty do garlic and whit onions to the cooked meat and let it season through. I wanted to use taco seasoning but I wasn't about to go to the store just for that, so I used fajita seasoning instead. After this cooked for about 30 minutest, I layered it with corn tortillas (4 with each layer), black olives, and chopped green olives. I poured the remainder of the enchilada sauce on top and let it cook on low until it began to show a sign of simmering. After this, I put it on warm. It taste delicious! You can add more seasonings to your liking for added flavor. I did end up adding a sprinkle of garlic powder at the end and more cheese. The next time I will use chicken breast with this recipe, add the vegetables listed and sautéed mushrooms along with the recipe instead.

Grandmother's Buttermilk Cornbread
Delicious! I used 1/3 cup of Splenda instead of sugar. However, I did spread honey on top before eating it. I will make it again and use 2/3 cup of Splenda for the full taste of sweetness without the honey.
