Cheesy Spinach Lasagna

I am not sure if using fat free cheeses would make a difference in this recipe, but I give this recipe a 1. My boyfriend didn't think it was that bad, but I took one bite and couldn't swallow anymore.

Zucchini Bread VI

This bread is soooo good. If you leave out the pecans, sub all natural applesauce for veg oil and splenda for sugar, each serving is about 100 cals, 1 g. of fat and no sugar! These are absolutely fabulous.

Allspice Cream Cheese Frosting

I licked the bowl clean! I used this on the lite carrot cake from this site... outstanding! I also sprinkled flaked coconut over the cake after icing it. Made it for my boyfriend's birthday- he LOVED it! Thanks v monte!

Lite Carrot Cake

I made this to fufill my boyfriend's request for carrot cake for his birthday. I used 2 cups of grated carrots as well as a jar of carrot baby food. I also incorporated the spices other reviewers had suggested. It was a great cake, but a little dry. I let the to 9 inch rounds sit on the counter for a day before I iced them, and it may have contributed to the dryness. A great alternative to high fat carrot cake.

Low Fat Apple Bran Muffins

These were pretty good, but mine came out a little dry. I used whole wheat flour, 1 1/2 tsp of baking soda, 1 tsp of vanilla, 1 c. of diced apple, and 1/2 c. of all natural applesauce. I also added 1 tsp of cinnamon and 1/3 c. of raisins. The apple taste did get lost, but the raisins were a nice addition. These muffins are GREAT for the added fiber.

Easy Cajun Jambalaya

this was very easy, and it turned out perfect. I used brown rice instead of white, added more sausage and left out the celery. My boyfriend went for two helpings. We had this and king cake last night in celebration of "Fat Tuesday".

Better Than Sex Cake II

This was a fun cake to make, although a bit hard to get things to "sink" into the cake after it was baked. Also, the finished dessert was VERY sweet. make sure you have a glass of milk on hand!

No Crust Strawberry Pie

This was the easiest dessert I have ever made- and it was delicious! I also loved that it was so low in calories and fat. great for when you are trying to diet. Also, I think it is sweet enough even without the cool whip.
