Taco Bake II

I thought this was pretty good, there are a few things I would change. I would not use tortilla chips on the bottom the next time. I used them this time and by the time the dish had baked, they were soggy and blah. I did use some medium tortillas after layer one and those did not get as soggy as the chips. I still felt like I needed something crunchy so we crumbled tortilla chips on top of the bake. I also used a large jar of mild salsa and a can of diced tomatoes (slightly drained) which helped it not dry out. A good recipe for family dinners but if you get home later from work like I do, cook the meat mixture the night before and it saves a bunch of time.

Zesty Slow Cooker Chicken Barbecue

I read the reviews from those others who found the chicken got mushy or dry or that there was no taste to the actual chicken. I used frozen chicken since I was going to be at work all day. I also added water to help retain the moisture. I seasoned the chicken and also added red onions and other spices. After cooking in the bbq mix for 8 hours, the chicken was still dry and a bit mushy and no real seasoning to it after soaking in bbq sauce. I think that this may be good to cook on high for 2 hours in your crockpot but not for more than that. It was good to try something new, but I won't be trying this again.

Cheesy Chicken and Rice Casserole

Good Recipe!! This was good and a variety to our usual meals! I did not alter the recipe this time, but next time I plan on adding more seasoning and probably peppers and onions, and sour cream for extra creaminess.
