Easy Pierogi Casserole

I made this recipe last night. I used instant mashed potatoes because I was feeling lazy. I couldn't find Herb and Garlic cream cheese so I just used garlic cream cheese. I also used french fried onions instead of green onions. My husband thought this recipe was very good. Two children also enjoyed it. I thought it was pretty salty but otherwise very good. Next time I make it, assuming I use instant potatoes again, I will omit the salt called for on the box. The potato mixture does not spread easily across the noodles but perhaps using thinner potatoes would solve that problem.

Homemade Spanakopita

I made this recipe as is except I used dried dill. I found it rather bland. One child described it as "awful." The other child picked at it and ate a bit. My husband liked it. Perhaps fresh dill is key

Zucchini Herb Casserole

This was delicious and the herbs made my house smell great. Even my vegetable loathing husband enjoyed it. I substituted yellow squash for the zucchini because the market was out of the latter. Next time I will use the zucchini and it will probably be even better.

Marinated Grilled Shrimp

My husband has deemed this the best marinade ever. We use it for shrimp, beef and chicken. Whatever we marinade turns out delicious each and every time. You can use crushed dried basil instead of fresh and it is still wonderful.

Zesty Italian Crescent Casserole

I think this recipe had potential. However, I had to keep putting it in the oven because the crescent rolls just would not fully bake. Eventually I had to give up. I'm sure the error is mine but I'm not going to attempt the recipe again.

Italian Sausage Soup

This soup is wonderful! Perfect for a cold winter evening. I use ground sausage (hot Italian) as that is what is available in my location. I have made this using zucchini and I have also substituted the zucchini with yellow squash and both are excellent. I like to use baby spinach and I also sometimes add small pasta (ditalini, acini de pepe).

White Chili I

My husband requested white chili. I had never made it before and chose this recipe because it didn't seem complicated. It was excellent! I used one onion instead of two, ground turkey instead of pork and used two cans of beans. Unlike some others, I did not have a problem with the chili being too watery.

Pizza Casserole

Super easy and a hit with the kids. This recipe is easy to vary depending on taste preferences or what ingredients you have on hand. We used mushrooms, bacon bits and pepperoni.

Roquefort Pear Salad

This was interesting. It is one of those things that you aren't quite sure you are going to like but turns out being delicious. My husband and I liked it. Our children did not (they didn't seem to like the dressing). I did double the dressing per other reviews (doubled everything but the oil) and ended up with too much. I don't think glazing the pecans is necessary if you are trying to watch your sugar intake but they are rather tasty.

Raspberry Lemonade Pie

This was pretty good. I didn't find it to be too sour or too sweet. I used frozen raspberries rather than fresh. I also used lite Cool Whip and sugar free Jello. It took greater than 4 hours for this pie to set. I plan on making this again with blueberries rather than raspberries.

Alfredo Sauce

Perhaps I was impatient and didn't give it enough time but I could not get the shredded parm. cheese to melt which left a lumpy, unpleasant texture. I also found this to be too garlicky (and I like garlic).

Easy Mexican Casserole

This recipe is fairly fast to prepare. I didn't crush the chips, just layered them on the bottom and they did get a bit soggy. Otherwise, everything turned out great. My children really seemed to enjoy this.

Biscuit Pizza Bake

The biscuits need to be pre-baked for a few minutes unless you want to deal with uncooked dough. This recipe is extremely easy and quick which makes it a good one in my book. As an added bonus every member of the family like it. You can, of course, use any pizza topping ingredients that you like instead of or in addition to what is listed.

This isn't anything special...just a deep dish pizza but it is easy and fast so it is perfect for a weeknight or when you don't feel like putting forth a lot of effort.
