Oh my gosh! This a a fantastic & easy recipe. I was hesitant - and read over all the hints, etc., as it was my first time using fondant. But, it was so easy (if you have a KitchenAid mixer). I needed 4 colors for the Toy Story Cake I was making. So made 4 batches. Only used half of the water called for in the recipe. Dumped the hot melted marshmallows into the well-greased KA and gradually added SIFTED powered sugar (with the dough hook) till it turned into a big lump. (It didn't require the full amount of sugar called for in the recipe). THen greased my hands and counter and kneeded in more sugar as needed till it didn't stick. It felt like playdoh. Refrigerated it overnight (but, honestly, don't think I had to). Next day, let come to room temp., but "softened" some in microwave as I was in a hurry. Watch carefully -- about 10-20 sec. on very low power. Then it was perfect to roll out. Greased my hands and counter (did not need more sugar to roll out) and it rolled beautifully! Tastes good too! It has given me inspiration to make lots more cakes with fondant!
