Adobo Sirloin

Yummy! I will usually make this with london broil, as we have a family of 5. I use 2-3 chopped chipotles and 3 Tbs of adobo sauce (the kids aren't crazy about spicy, hubby and I are), and marinate overnight. The best part of this recipe is the leftovers for lunch the next day wrapped in warm tortillas with cheese and sour cream!

Bacon Roll Ups I

These are so addicting! I followed other advice and only used 1 package cream cheese and added some onion powder. I cut the crusts off Pepperidge Farm white sandwich bread, then used a rolling pin to flatten, spread with cream cheese and then cut into 1/3. My 2yr old son loved the extra cream cheese on bread. I ended up cooking for longer than suggested, closer to 30-40 minutes so the bacon crisps. Cool to almost room temperature (they are not as good hot from the oven), and watch out. We eat them as a late night snack, and then left overs for breakfast the next morning. Yummy.

Butter Pecan Ice Cream

My husband thought this was great, but I thought it was missing something. I salted the pecans in the skillet with the butter, because I love salty in sweet, but maybe not enough butter flavor. Maybe the pecans needed to be toasted a little more? I will keep trying, because we love Butter Pecan.

Cinnamon Ice Cream

This was delicious! The texture was wonderful, very easy to make. We recently got an ice cream maker and have been trying many recipes, and the texture on this one is a keeper, I wil adapt many recipes to be like this.

Cornell Chicken Marinade

I thought this recipe was awsome! My family thought that it was a little to salty, so next time I will cut the salt down to 1Tbs. I let bone in chicken pieces marinate overnight and then basted with reserved sauce. The chicken was very moist and tender. I have been waiting all week for the rain to stop so I can make this again. For the reviewer who thought this was to vinegary - it is supposed to be.

Bread Machine Bagels

The preparation on these was very easy, the only problem is that we weren't sure if the dough should go through any rising in the bread machine (our machine does 2 rise cycles). We let it go for 1 and then took out and made the bagels according to directions. They came out just like bread, but that is due to the rising in the machine. Next time we will only mix the dough, no rising, or just do it by hand. I am definately looking forward to trying this again, with better results. One last thing, we did boil them a little longer, about 2-3 minutes total, based on looks and other recipes, and that seems to have helped.

Grilled Potatoes and Onion

This is my favorite way to have potatoes on the grill. We have been using this recipe for years, and not until reading these reviews did I ever think of spraying the foil with cooking spray to keep potatoes from sticking. Duh!! Thanks for the great idea!

Annie's Fruit Salsa and Cinnamon Chips

This was pretty good the first day and awsome the second. I did change things a little, as fresh berries weren't in season when I made it. I used 1 apple, 1 pear, 2 kiwis and a bag of frozen mixed berries. I added lime juice to the apple and pear to prevent browness and cut back on the sugar (I only used the brown sugar). I also did not use any preserves as the juice from the berries and the brown sugar made it juicy enough. I think the lime juice is what really helped off set the sweetness. Also, when making the tortillas I found it was easier to spray the tortillas and then dredge in cinnamon/sugar, cut and then spray again. Great recipe, and I can't wait to make now that strawberries are coming into season!

Baked Seafood Au Gratin

I personally did not care too much for this recipe, but I did have to change a few things. I had to leave out the shrimp due to allergies, so I doubled the Flounder, and found out that I really do not like scallops at all. My husband on the other hand thought it was great. It was very expensive to make, 1 lb crab meat costs $21 here and we live right by the ocean! I thought preperation was easy, but my husband thought it was a lot of work (watching from the other room!). If you like seafood and have some cash to spare, definately try it.

Fudge Truffle Cheesecake

This was easy and delicious! Not like a regular cheesecake, so if that is what you are looking for, keep looking. It does taste just like a fudge truffle. The only thing I did differently was to use crushed chocolate wafer crumbs instead of the vanilla wafer/cocoa mix. Much easier. Also, it tastes even better the second day. Great recipe. Thanks.

Barbecue Beef Cups

This was quick and easy and the kids ate it without a problem, even the picky 13yr old. I also used sloppy joe mix and extra cheese on top. I was able to use regular size biscuits and just flatten with my hands and they fit perfectly into the muffin tin. I will definately make this again, maybe trying a spoonfull of mashed potatoes underneath the meat.

Cream Puffs

This was the easiest recipe! It was sooo good. I'll admit that I was a little worried by previous reviews about the dough being too egg-y, but went with it anyway. The dough did smell very egg-y while cooking, but tastes great. I also whipped the cream first, then mixed the pudding and milk together and folded into whipped cream. Delicious!

Jumbo Shells Stuffed with Turkey

My husband and I found this very tasty, but since we do not like the strong taste of sherry we substituted dry white wine and added chopped spinach to the mixture. I also found it helpful to cut back on the shallots. Very good!

BLT Dip

Since we don't like mayo in my house, I substituted 1 6oz pkg softened cream cheese and 1 cup + of sour cream. I also add some chopped scallions and shredded cheddar. Doesn't look too pretty, but tastes great!!! Ok, this is an addition to this review: I made this dip this afternoon because I had all the ingredients on hand and didnt want them to go to waste. I made some frozen potato skins with cheese on them and topped with this dip and WOW!! This is my favorite snack/dip. I actually have cravings for it. Yummy!
