About this Cook
I cook because I love food. I love to cook it and eat it, and so does my husband. Growing up my father was the real "cook" in the house, my mother did the old standby's. In our house both my husband and I love to cook. We have 3 kids between us and they have varying tastes in food, so trying to find something to please everyone is pretty tough, especially the 2 yr old...some days he hates food, other days he loves it! My greatest pleasures in cooking are sharing with others and having them think whatever it is is the best they have ever eaten.
My favorite things to cook
I like to cook most food, but find I do better with appetizers, pasta, and deserts. I tend to leave the meat dishes to my husband, who luckily seems to specialize in them.

Adobo Sirloin
Yummy! I will usually make this with london broil, as we have a family of 5. I use 2-3 chopped chipotles and 3 Tbs of adobo sauce (the kids aren't crazy about spicy, hubby and I are), and marinate overnight. The best part of this recipe is the leftovers for lunch the next day wrapped in warm tortillas with cheese and sour cream!

Bacon Roll Ups I
These are so addicting! I followed other advice and only used 1 package cream cheese and added some onion powder. I cut the crusts off Pepperidge Farm white sandwich bread, then used a rolling pin to flatten, spread with cream cheese and then cut into 1/3. My 2yr old son loved the extra cream cheese on bread. I ended up cooking for longer than suggested, closer to 30-40 minutes so the bacon crisps. Cool to almost room temperature (they are not as good hot from the oven), and watch out. We eat them as a late night snack, and then left overs for breakfast the next morning. Yummy.

Butter Pecan Ice Cream
My husband thought this was great, but I thought it was missing something. I salted the pecans in the skillet with the butter, because I love salty in sweet, but maybe not enough butter flavor. Maybe the pecans needed to be toasted a little more? I will keep trying, because we love Butter Pecan.
