Creamy Dill Cucumber Toasties

Made these for an appetizer at a party. They were a hit! I would recommend using a pinch of salt along with the dill to bring out the flavor of the cucumbers. I think next time I'll also use a flavored cream cheese. Definitely toast the bread. I used a whole wheat baguette which enhanced the flavor.

Delicata Delish

I used veggie broth instead of water, and added sauteed zucchini to the shallots and garlic. I also used peanut pieces instead of pine nuts on a second try because I ran out of pine nuts. It was great! I also added goat cheese to the quinoa mixture. Great flavor enhancer! Overall, a wonderful recipe.

Portobello Mushroom Stroganoff

With the changes, this won the approval of even the biggest carnivores at my stroganoff-off. I used chanterelles, shiitake, and portabellos. Great over egg noodles or rice!

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

I made a few adjustments after reading the other reviews. First, I sauteed the stems with the onions since they take a bit longer to cook and are somewhat bitter otherwise. I started salting at this step. Then I used a whole can of garbonzo beans and added a couple of tablespoons of apple cider vinegar to the hot pot, again to combat the inherent bitterness of the greens. I also added chili powder and Thai dragon pepper to the mix. It turned out wonderfully and was only better as it sat in the fridge for a couple of days. I would recommend using a very large bunch of chard if you use the whole can of beans. I used a ton from my garden and still had to supplement it with mustard greens.

Seattle Cream Cheese Dogs

Great start to the true Seattle dog! One thing is missing, however... the smoked salmon! If you don't like fish, do bacon. Our little town in eastern Washington did this and it was perfection in your hand. Thank you for specifying Walla Walla onions! Nothing grills up better than those :)
