I am wife to the incredibly talented "Greg the Computer Guy," mom to an energetic 4 year old boy named Kaleb, and I'm expecting another little one by June 2011. I also enjoy cooking and experimenting with all types of food in the kitchen, gardening in our backyard, photography of all sorts of random things, and art of all kinds. I have also been told that I talk too loudly.
My favorite things to cook
I love to make new deserts and cakes from scratch, trying a new recipe each time. I also love experimenting with just about everything, especially main dishes. I have invented a few recipes and I have perfected the roasted turkey (well, at least my family thinks so). I really enjoy trying new recipes, especially ethnic ones.
My favorite family cooking traditions
I've been cooking since I was really little (before I was 10). I was the oldest of 4 kids and it was mostly our job to make dinner every night, so I was the one that usually planned the meals. My parents taught me how to cook, and now I am trying to teach my son how to put things together in the kitchen. (Of course, he is only 4, so about all he can do to help is mix stuff up and help flip a pancake!)
My cooking triumphs
I love to entertain for people, and planning for big meals is something I am good at. On Christmas 2009, I made a meal for about 25 people practically by myself... all homemade. It was a hectic, crazy day, but it was all worth it to see how my cooking affected everyone in such a positive way. I love how everyone begs for me to make my turkey for just about every special occasion.

Slow Cooker Texas Pulled Pork
I doubled this for a large gathering and just about everyone there was pleased with it. I cooked it in the slow cooker overnight on low for about 12 hours, then put it in the refrigerator the next morning. After it was cooled, we pulled the meat, put it in an oven-safe dish and drizzled it with honey BBQ sauce. Closer to dinnertime, I popped it in a 350 degree oven for about 30 minutes and it was perfect.

Fluffy Pancakes
Best pancakes ever. I usually make these once or twice a week. Fluffy and tender, these pancakes will not disappoint. My 4 year old son even loves to help me mix and flip!

Smooth Sweet Tea
This is my go to iced tea recipe. I usually double this and keep a pitcher in my refrigerator. I try to have some on hand when having guests over, and I have always had great reviews on it. Thanks for posting this!
