Baked Ziti I

This is my go-to ziti recipe because it is so quick and easy! I used more mozzarella cheese in place of the provolone. I usually never have it on hand. I bake it in a 9x11 glass pan uncovered for 40-50 minutes. It's delicious and sometimes I even make two or three pans to freeze for busy/lazy days.

Bread Machine Pumpernickel Bread

This pumpernickel bread machine recipe is so easy and so good, it deserves 5 stars. My bread machine makes a 1.5 lb loaf, and I would say that the recipes ingredients ended up making a bigger loaf, which had just barely skimmed the top of the lid of my machine. I wouldn't scale down the ingredients because it did fit and didn't make a mess, but it does just barely fit in a 1.5 lb loaf pan when finished. I also ran mine on a medium crust, which burned in one small spot but came out delicious anyway. I have a bread slicer to make clean cuts and then I put half of the loaf in the freezer and use the half the loaf for lunches.

Aunt Anne's Coffee Cake

This is delicious! The recipe is one-two-three easy! I can't believe how good this tastes, it's great to whip up when you need to feed your company. Perfect for breakfast, lunch or after dinner! I followed the recipe exactly, except I add extra cinnamon in the strudel and a little bit in the cake. I also bump up the measurements in the strudel to get more crunch on top!

Fresh Blueberry Pie I

This recipe was excellent! This is the very first pie I ever baked, it turned out wonderful! I used a 9.5" deep pie plate. I ended up using about 7 cups of blueberries and kept the rest of the ingredients the same. I did sprinkle a little extra white sugar over the top after I filled up the pie. It was perfect! Thick, not running, sweet but not sickening. Everyone loved it! It was so easy and I will definitely make it again. I used frozen blueberries and let them sit in luke warm water for an hour to defrost. See my picture.

Baker's Secret Pie Crust

This recipe is the FIRST pie crust recipe I ever tried. I have never baked a pie before this, so I used this crust recipe to make a Blueberry pie. That pie turned out to be sooo good I think it could be a county fair blue ribbon winner! I didn't refrigerate and freeze the dough as long as directed because I didn't have time, but it turned out just right! I went online and searched for a video on how to make a lattice crust. It was actually easy and looked beautiful! You can see a picture on my page. I put foil around the crimped part of the crust for the first 15 minutes while baking so it didn't burn. It came out perfectly lightly browned!

Chocolate Sandwich Cookies II

Delicious. I suggest adding a teaspoon of vanilla extract to your cream cheese/sugar blend. Use a piper or put the cream in a ziploc and cut the corner. Much easier and cleaner! When putting the top cookie over the cream, twist it like an oreo to get the filling evenly smoothed out. I also suggest you make smaller cookies. Just use your hands to mix the batter (it's very stiff) and roll it into balls. Use parchment paper on your cookie sheet and use your hand to flatten the cookie. What a yummy treat. Highly recommend.
