Mom's Zucchini Bread

This is a "can't just have one slice" kind of bread, for sure! The batter was rather thick, almost like cookie dough, and it's not a "pretty" bread, but it was just wonderful - definately a keeper!!

Creamy Twice-Baked Potatoes

I served these with the Bacon Roasted chicken from this site. After the potatoes were baked, I added cheddar cheese and the bacon from the chicken on top, then baked a few minutes more. I noticed my dinner guests finished their potato FIRST so I knew it was good!

Bacon Roasted Chicken

I had a 5 lb. chicken, which took 2 hours, 40 minutes. The beef broth made no sense to me, so used chicken broth. I stuffed it with onion and garlic, poked it a few times, then covered it with the bacon. That was one beautiful bird that came out of the oven! Very impressive, very moist, but I was just hoping for a little more flavor. I think next time I will add more seasonings, wrap it up tightly and let sit in the fridge overnight before baking it - maybe by "marinating" it, more flavor will burst through. Still, very very good and will certainly enjoy the leftovers!

Tomato Mozzarella Salad

All my dinner guests said this was very good and how pretty it was! (I especially loved the presentation!!) I used fresh mozzarella that I sliced, and upon opening it, I came across a recipe printed on the packaging for tomato mozzarella salad. It used the same ingredients, but with 3 T. Balsamic vinegar and either 1 or 2 teaspoons (can't remember) of dijon mustard! Interesting, huh? I didn't do that, just added the couple splashes of vinegar like most every one else, but I can't help but wonder how much more flavor would be added with those additions....

Brown Sugar Smokies

I'm giving this 5 stars because everyone loved them and they did go fast! I just wasn't happy with the way my burned a little on the bottom. I threaded the bacon-wrapped smokies on metal skewers, placed them on an aluminum foil-lined baking sheet, sprinkled the brown sugar over all, then baked for about 30 minutes. The brown sugar melted into a black gooey mess underneath all the skewers, but no one but me cared! Next time I'll try some of the other suggestions of coating the bacon with the sugar, THEN wrapping them up and stick them in the fridge for a few hours before baking. I'm sure no matter how they turn out they will still go fast! I think it's also because they are quick to grab and easier than having to dip something or spread something on a cracker. Very tasty though, and will definately be making them again, no matter WHAT the reason is! :)

Sausage con Queso Dip

Flavor was great, but it sure got cold fast, no one would eat it that way. I have a crockpot, but it wouldn't have worked on the coffee table (we had guests over for a movie). I need to invest in one of those heated chip and dip trays I guess. Anyway, everyone did like it a lot; I just had to make an awful lot of trips to the microwave...lol.

Dog Treats I

I printed this recipe out quite a few months ago and finally got around to making these for my mother's very finicky poodle. She loved the raw dough, which we took as a good sign, but once baked and cooled, she's managed to eat only 2 of them and no more! We gave my brother a bag of them to take home to his border collie and she LOVES them! So the next week, he came over again, so we decided to give him the rest of the treats, only to find MOLD had grown all over them! (I had put them on a shelf in a Tupperware container with her other treats). I wish I had went back and read the reviews again, because one person did suggest putting them in the refrigerator. So unfortunately most of them went to waste anyway. I won't give up though, I will find something this picky dog will eat! (and refrigerate it! lol)

Mouse's Macaroni and Cheese

I've never been a fan of processed cheese, but know that it does melt down very well for good creamy sauces. I used 1 3/4 cup of macaroni, then followed the recipe exactly; but I just couldnt get past the flavor of the processed cheeses. I wish I had used cheddar for the American, maybe that would've made the difference. The other problem I had with this, is the next day we decided to heat some up for lunch, but I had to cut it out of the bowl with a knife it had hardened so much! So upon re-heating, be sure to add some milk to it.

Hamburger Salad Sandwiches

I was hoping by some of the reviews, this would taste better than it sounded, but it did not. I made it exactly as written for my BF and I, simply because I had all the ingredients on hand. After the first bite, we decided it needed some more flavor, so added Tiger Sauce. Ok, a little better, but not quite there. So we added a slice of cheese. Still not good enough. I got up and cooked some bacon to add to it, which finally made it edible enough for my BF to finish his, but mind ended up in the trash. Oh, and we tried it cold AND hot.

Stuffed Pork Chops I

I used the store-bought stuffing and baked it for 2 hrs at 325 as suggested by so many others, but I was not happy with the outcome. The meat was moist on the outside, but dry towards the center. It could've used more stuffing, and maybe the home-made version would've been better, too. I won't be trying this again though, sorry.

Angela's Alfredo Ham

This was very rich, but excellent served with a salad, garlic toast, and glass of Merlot! It didn't get 5 stars due to the over-abundance of peas. Next time I will only add about 3/4 cup. I also used Rebecca Swift's Alfredo Sauce recipe instead of the jarred stuff and was very happy with the result. Will make again and try it with Italian sausage next time.

Baked Pork Chops I

Great recipe, agreeably time-consuming, but worth it. I seasoned 6 thick boneless chops with salt, pepper and garlic powder, and seasoned the flour with more garlic and adobo criollo. I doubled the sauce, using one can of cream of mushroom and one can of golden mushroom, as someone else suggested and served it with mashed potatoes. I was very happy with the results - chops were tender, moist, and had a wonderful flavor.

Taco Lasagna

Great casserole and fun to make! I halved the recipe, and did add a can of diced tomatoes with green chilies (mixed it together with the salsa) and I'm glad I did, cuz it just didn't seem like enough sauce when I started putting it together. And I was right! It came out perfect! :)

Bacon Wrapped Hamburgers

My boyfriend and I loved these! I chose to cook them in a skillet though, as I was afraid the bacon would stick to the grill or fall off. I wrapped them from top to bottom, rather than around the sides. Frying them slowly made the bacon come out just right, and the meat cooked through. I put Swiss cheese on them, with dijon mustard and mayo...YUM!! Will definately make again!

Cheesy Spaghetti Bake

This was delicious! I cut the recipe in half, added a small can of mushrooms, and used 1 lb. ground beef and 1 lb. sausage. I was worried that there was SO much sauce for the amount of noodles, but it came out perfect! The noodles really did absorb the liquid. Great dish for leftovers, too!
