Deep Fried French Toast

This was very good, but had to sprinkle cinnamon and sugar on top, then maple syrup to taste better. I may try this again, with the powdered sugar instead.

Old-Fashioned Swiss Steak

The meat was so tender and delicious, that I will definately be making this again. I added mushrooms, but kept everything else the same. Perfect with mashed potatoes.

Zucchini Pie

I love this quiche - but I shred the zucchini, versus dicing it, and I add a heaping 1/2 cup of shredded cheddar to it, too. I reluctantly used Egg Beaters as requested by Mom, but it didn't seem to matter - it was still good! :)

Original Recipe French Toast

This was really delicious - my BF usually doesn't like a sweet breakfast, but served with some thick sliced bacon and scrambled eggs, he was in heaven! Loved this recipe and look forward to having it again.

Cadillac Pimento Cheese

Very, very good, but I needed to add some diced jalapenos to give it more flavor. I also used cheddar instead of American (personal preference). Served it on Ritz crackers, but would be good with Fritos Scoops, too. Will make again.

Grilled Roast Beef Sandwiches

I made these for a small meeting at my home, using a swirled pumpernickel-rye bread and everyone loved it! Nobody felt the need to dip it in salsa - they said it was great just as is - I'll definately be making these again, thanks!

Mexican White Cheese Dip/Sauce

Well, I used yellow American cuz that's all I had, and thought I'd replace the green chilies with jalapenos. I was on the phone while putting this together, and meant to only put in 1/2 of a 4oz. can of the peppers, but ended up adding the whole thing! We really like spicy food, but that was a bit much. My BF also didn't care for all the cumin - said I should halve it next time too. I'll try this again, without the phone next time, lol.

Oven Fresh Seasoned Potato Wedges

These were very tasty, and my BF loved them. He asked me to cut the potatoes into smaller chunks next time, cuz he liked the outside flavors so much. I served them with a ketchup/mayo combo, but we ate more of them without it.

Baked Corn I

My mother said this was a keeper and everyone agreed - I made it exactly as written (except I baked it in an 8x8 baking dish) and wouldn't change a thing. Nice texture, and not too sweet, I served it with Southwestern-stuffed chicken and a Mexican salad.

Awesome Grilled Cheese Sandwiches

I only looked at this recipe for a goof, thinking "now, how can anybody not know how to make a grilled cheese sandwich?" But to my amazement, this cooking method blew me away! So crunchy and yummy - and many possiblities for meat and cheese sandwiches, too. Like so many others, I'll never go back to pan-frying again!

Creamed Eggs

I also added a little cheddar to the sauce, along with some cayenne pepper and extra black pepper. Served it over English muffins with crumbled bacon, and hash browns. Yummy, and very filling!

Toasted Garlic Bread

This was good, but after following the directions the first time, I did it differently the next. I cooked it on the "toast" setting of my toaster oven, rather than the "broil" setting, without the use of a pan - just set it right on the rack. That way the underside of the bread got crisp too. After putting the cheese on, I broiled it.

Garlic Bread Mama Rita's Way!

This bread is great! I had to sub garlic powder for the paste, but I loved the mayo addition and using hoagie rolls instead of French or Italian bread. The ONLY thing I'll do different next time is use half the amount of basil.

Spaghetti Sauce II

I made this (without the sausage)to serve over chicken parmigiana and spaghetti, using diced tomatoes, but I found it to be too thick (and I normally like a thick sauce). Also, it actually had a bitter taste to it. Maybe it was the wine I used (Merlot). I'll try this again though, using a sweeter wine like Rose, use equal amounts of oregano and basil, and add a small can of tomato sauce.

Baked Spaghetti

This was good, but a little dry. I used Prego Sausage and Garlic Sauce, and added a can of mushrooms, but it was unanimous that it needed more spaghetti sauce. I might try this again, and use half ground beef and half sausage, too.
