Oven-Roasted Potatoes

These are easy and quick to make. I cooked them for 10 minutes in the microwave prior to baking as suggested previously. I also cut the salt to one-half teaspoon. Any of your favorite spices could be added--but none are needed. They are delicious the way they are!

Chocolate Layered Pie

Very good! My son asked for this pie for Christmas dinner--he really loved it. I took the advice of others and used 1 1/3 cups milk for the pudding--and this was a perfect consistency for the chocolate pudding. I also added vanilla per the suggestion of others to the cream cheese mixture. The only problem that I had was the crust stuck to the bottom of the pie plate--I used a glass plate so maybe that was the problem.

Vegetarian Tortilla Stew

This soup is delicious! I have been a vegetarian for 25 years and this is my favorite soup--but, my non-vegetarian husband LOVES it as well. I always add the whole can of tomatoes and don't leave out the veggie "chicken". Morningstar Farms has a very good one--even if you don't like meat substitutes, I bet you will like this one. Serve this with corn muffins and you have a warm and hearty meal. Enjoy!

Spinach Quiche

Try this quiche--you won't be sorry. I made it for a bridal shower and everyone loved it. I personally don't care for quiche--but I even enjoyed it. It is very tasty!

Banana Sour Cream Bread

"The best!" It is perfect--so moist. Everyone raved about this banana bread. I have tried numerous recipes for banana bread and am always disappointed--not this time!

This is really delicious soup! It has an amazing flavor and really hit the spot. Like others, I added the parmesan at the table. I did add a large can of tomatoes and extra beans.

Carrot Cake I

Stuffed Peppers My Way

This dish is absolutely delicious! The entire family loved it--even my non-vegetarian husband said it was by far the best stuffed peppers that he had ever eaten. I have already made it twice and will be making it often in the future. I did change it a bit and doubled the recipe. After I had assembled the dish, I covered it with a large can of tomato sauce and topped with 8 oz. of grated cheddar cheese. Yum!

Honey Wheat Bread I

This was the best wheat bread I have ever made--And I started making bread as a young girl!! It had an EXCELLENT texture, soft and light with a flaky crust. My daughter even loved it and she does not like any kind of wheat bread. This is now my staple bread recipe. It was great for sandwiches--slices easily. I placed half the dough in mini bread pans and braided the dough--it was great as dinner rolls.

Easy Pesto

Tortilla Rollups III

I took these as an appetizer for a Mexican-inspired dinner--they were the first appetizer gone! No one even bothered to dip them in the fresh salsa I had made! Very good!

Mango Tango Black Bean Salsa

This colorful salsa was a BIG hit at a recent dinner! Everyone raved about it and wanted the recipe. The night before I was to attend the dinner, I made the salsa to try it out--my husband ate the whole bowl! I added 1 fresh diced jalepeno for a little extra spice and grated the peel of one lime for a little fresh kick. I will make this again and again.
