Overnight Blueberry French Toast

This is a five star recipe if you add 1/4 cup powdered sugar to the cream cheese and sprinkle with cinnamon. Otherwise I made exactly as written. Just drop by teaspoonfuls on top of first bread layer. All French toast has cinnamon on it so that was a given for me. Used two small containers of blueberries. Put one cup on top of cheese. The rest (and I didn't even measure) I used in the syrup. 12 eggs. Real maple syrup. I pressed the top layer of bread down in the egg mixture so it all got covered. Baked in a convection oven at 350* for 30 minutes covered and 30 minutes uncovered. This timing came out perfect for my oven. Poured some of the syrup over the casserole while warm. Served the rest on the table for those who wanted more. Served with skinless smoked sausage for an awesome breakfast. This could be put together real fast in the evening if the bread was already cubed and the cream cheese mixed. I used about 16, 1/2" slices of store bakery French bread cubed.

White Chocolate Chip Oatmeal Cookies

These are good. Hubby liked. I thought they were to chocolatee he didn't. I threw in about 3/4cup of dried cranberries as I really wanted to make the white chocolate cranberry cookie recipe on this site but needed more cookies that that one had and not enough cranberries. It was a good addition. Used walnuts, my preference over pecans. Took 12 minutes on a light cookie sheet. Still chewy which we prefer over crunchy.

Szechwan Shrimp

Awesomely spicy! I doubled the sauce. Could not imagine not doing that. I added sugar pea pods, shaved carrots and the green onion to have our veggies all in one pot. I don't think I put enough shrimp in (just dumped some in). It only served two with some left over rice. Will definitely make again. Would also be good with chicken or beef.

Peppermint Martini

Really, really good. So good I had two. ?? I thought the recipe called for a splash of half and half so I used just a bit of f/f 1/2 1/2. But that must have been another recipe I saw. So it was really good with 1/2 1/2. Would be stronger without and I'm sure I'd like it that way too!

Taco Salad III

Green Beans with Cherry Tomatoes

Very good. Easy to make at the last minute. Everyone really liked it. I stirred the tomatoes in at the last minute so they stayed plump. I also used the fresh basil in the tube as I sometimes don't use up all the fresh I buy and it goes to waste. I will make this again in the summer when I have fresh basil growing.

Slow Cooker Enchiladas

This recipe as is, is bland and tastes like mushroom soup. After tasting, I doctored it up and I would give my version 4 stars. Here it is if anyone's interested. 1 lb ground beef, 1 lb ground turkey (all low fat versions). 1 pkg. taco seasoning, 1 pkg. dry enchilada seasoning. Use just 1 cup of water. Add, cumin, oregano and chopped jalapeño peppers. Didn't measure any of it just went by taste. Add soups. Stir all together. Layer in crockpot, starting and ending with whole corn tortilla. I used 12 (if I remember right). Top each layer with cheese. Needed about 3 cups. Using less water made it less soupy. Was not at all dry. Single tortilla layers kind of got lost in the finished product but taste was probably the same. Mine cooked on low for about 4 hours but it wouldn't need to. Made early, layered in crock pot, and heated up several hours later. Served with sour cream and taco sauce.

Cinnamon Snack Mix

Sticky! I made as written. Baked as written only stirring after 5 minutes. I dumped out on waxed paper to cool. It is very sticky and messy to eat. Not kid friendly. Maybe need to cut down on butter and honey or bake a little longer. I won't try it again though. I did not have problems with anything burning. Disappointed as it isn't cheap to make.

Macaroni and Cheese with Caramelized Onions and Bacon

A lot of dirty pans for an ok Mac and cheese. I just mixed the onion mixture with the Mac to blend the flavors more. Not sure if I would make again but it was ok. Sprinkled a little more panko with asiago on top.

Tres Leches (Milk Cake)

Made as written. This was VERY soupy. Maybe it's supposed to be. Over a cup too much milk concoction. Not enough cake to soak it all up. I served with Vanilla Caramel Ice cream. I think it would've been better with half the milk mixture. The milk floating around the sides was just not appealing to me. I guess the flavor was ok. Used Pwd. Sugar instead of regular.

Honey Roasted Carrots

Made these a second time and they weren't as good as the first. Had other things in the oven at the same time but even the baby carrots didn't get done in an hour on convection bake. I thought they were better the first time.

Three Cheese Garlic Scalloped Potatoes

Delicious! Each time my husband eats the leftovers he raves about them just like he was eating them for the first time. Guess these will have to be my go-to potato recipe. His son made them so it can't be that hard. It's a keeper.

Carolina-Style Barbeque Sauce

Used on his brined pork chops and tuna steaks. Good on both. I thought the pork was a bit salty from the brine even after rinsing the meat before cooking. Sauce smelled of vinegar but did not taste like vinegar after grilling. I did not use all the hot pepper flakes, just sounded like a bit much. Used about half and thought it was hot enough. It was good enough I will try again.

Molasses Brined Pork Chops

This was a little salty. And i even rinsed the chops before grilling.Will cut the salt next time. Used with his bar b q suggestion. Also had high quality Duroc pork so hope I didn't ruin them by brining them. But had a lot of compliments.

Catherine's Spicy Chicken Soup

A lot of ingredients for just a so so soup. I had to add Cumin and Oregano for more Mexican spice. 2 cans of diced tomatoes is plenty. Could to use all the broth. Pan not big enough and it would've been too soupy for my taste. Hoping its better the second day. I chose to use the sour cream on top of each individual bowl and crunch some tortilla chips on top. Also added some chopped jalapeño to onion mixture. Used 2 tbs. chili pwd. Originally this was just a chicken chili. Guess I was looking more for a tortilla soup.

Grandmother's Buttermilk Cornbread

This recipe was great even though I kinda screwed it up. I started the recipe thinking I had regulars cornmeal. Had to make my own buttermilk as I didn't have any real on hand. When I got to the part to add cornmeal, flour, etc. I looked at my cornmeal bag and it was self-rising. So luckily I hadn't added any salt or flour yet. I added 2 c. Of the self rising mix. Omitted the salt and flour called for on the recipe. It baked for 30 minutes. Top was lightly crispy. It was a dense but sweet cornbread and my guest thought it was exceptional. Served with pork stew and/or with butter and honey. Good both ways. My goof my be my go to recipe but I would like to try this as written. Just wanted to write this review to let cooks know there's a way to use this recipe even if you don't have the exact ingredients. Followed the rest of the recipe as written. Thanks Grandma!

Quinoa Salad with Dried Fruit and Nuts

Don't try this recipe warm. It was just ok but kinda weird. I cooked the celery and added a few portebella mushrooms to olive oil. After a few minutes I added the pecans. When the quinoa was almost done I added the raisins to it. When it was done, I added the celery mixture, sesame oil, vinegar, lemon juice, pepper and parsley to the quinoa. Let set a few minutes then ate with a piece of chicken, I will see how leftovers are tomorrow but don't recommend doing the way I did.
