Bada Bing Bada Banged Potatoes

I'm not sure how you can screw up this recipe. Even cooking your potatoes a little too long does not ruin the flavor. Everyone loved them. I think 15 minutes on the stove is long enough. Although I did 20 and they were done and really didn't need any more time in the oven. I did put them in the oven to see if they would crisp up a bit. I did 3 lbs of potatoes both new red and gold. It served 10 people. Cut the ing. a little to adjust to fewer potatoes. Really good...

Corn and Crab Bisque

Tasty recipe. I added 1 Tbs. Old Bay Seasoning along with the bay leaves. Also added about 1 tsp. Lemon/Pepper Seasoning. Used 1/2 and 1/2 and skim milk. We like it spicy so this was a good recipe.

Key Lime Pie VII

This must be one amazing pie. I screwed up the recipe and it still came out good. I forgot the 3rd can of sweetened condensed milk (on the phone and trying to bake at the same time). I also forgot to stir in the lime zest so I sprinkled it on top. The pie sat up nicely. It was really good and no one thought it needed any more milk. They wouldn't have known the difference if I hadn't told them. I did make my own graham cracker crust and it was delish with a little allspice in it. Was out of cinnamon. This recipe is a keeper if you like Key Lime.

Grilled Tequila-Lime Shrimp

Marinated over night because I ended up forgetting to grill them. It did cook the shrimp a bit but I just didn't overcook them on the grill. I think they would've been a little better spicier but they were pretty good.

Sweet Green Bean Bundles

Made in a casserole dish and not bundles as I was feeding 11. Turned out great. Maybe needed a little salt. Used frozen green beans. Peppered maple bacon fried before hand. Cooked for same amount of time.

Spinach Apple Salad

A little too much vinegar for my taste. Had to add some honey to mellow it out a bit. Used red onion for color and crispy pink lady apples. Added some sugared walnuts on top of salad. Had planned to add some crumbled goat cheese to the salad but forgot. It was good and will make again. Many compliments.

White Chocolate Raspberry Cheesecake

Good cheesecake. Not alot of raspberry flavor in the cake. Helped to have it on the top. Did use the "all fruit" spread instead of doing the frozen raspberries maybe that was the problem. But still had a good raspberry taste...did not taste like jelly. Don't make a lot of cheesecakes but would make this one again if I needed one. Used a shallow water bath and cake did not crack. Could probably use this basic recipe for other flavors too (such as blueberry and strawberry).

Sugar Cream Pie I

Really Good! Pie. Made on vacation in an unknown kitchen and it came out perfect. Great the next day cold from the frige. Compliments from the landlords. Did not drizzle all that butter on top. Dotted with just a few small pieces of butter. Then baked for 12 minutes on the lower rack in the oven at 350 degrees instead of broiling (afraid of ruining the crust). It bubbled in the oven and came out perfect as far as I'm concerned. Solid in the middle, creamy. Loved the cinnamon instead of nutmeg flavor. Will make again and again.

Fish Chowder

This didn't do it for me. It was VERY bland as written. I ended up using about a Tsp. of Old Bay, 1 Tsp. lemon pepper seasoning, 1 Tsp. salt, dash of smokey paprika, dash of red pepper. Still thought it was a bit fishy, used Tilipia, which shouldn't have been fishy, and not much flavor. Won't make again and shows we all have different tastes. Husband said it was good but only had 1 bowl.

Delicious Ham and Potato Soup

This was just ok for me. I made as written except had to use Chicken broth instead of water and bullion. Maybe that's why it needed more flavor. But everyone said they liked it.

Chocolate Mice

These turned out so cute. Can't wait to hear my guest comments at the Halloween Party. Added a little Pwd. Sugar to choc./sour cream/ cookie mixture. Refrigerated overnight. Very stiff the next day. Rolled all the mice first. Then rolled in choc. crumbs. by the time I got to the last few they had dried out a bit and I had a hard time getting the crumbs to stick. Could not find shoe lace licorice ANYWHERE so used something I found in the fruit roolup isle. Eyes were some green and purple cupcake sprinkles. Didn't do a nose. I put pwd. sugar on my palms to roll the mice and it helped it not stick to my hand. Maybe thats why the crumbs didn't stick. Looked a litty mangy but hey it's Halloween! Will make again and I'm sure share the recipe. I doubled the batch and it made 26. The almond slices were a little hard to work with and to find unbroken ones. Next time I may try almond slivers instead.

Roasted Vegetables

I thought these were tastless. Maybe I didn't add enough salt and pepper. I prefer my version of roasted vegetables and thats olive oil and a packet of dry onion soup mix.

Refreshing Summertime Salad

This was amazingly good! I found a Marzetti White Balsamic Vinagerette so used 1/2 c.and just added 1 TBS. Apricot Nectar. Didn't need to pour all the dressing on. got raves from our guest! Now I need to go back to the store cause I'm craving it today! Make it for your summer meal! Made this again and it is sooo awesome! My all time favorite summer salad. More people should try it. Guests love it!

Sweet Onion Corn Bake

Delish! Made as written with a few exceptions.. added some frozen corn to the creamed as it didn't look like much. Didn't use a whole onion and chopped instead of sliced. Personally think 2 would be way too much. Didn't hurt a thing and everyone love it! Will be a keeper!

Pot Stickers Traditional

Got lots of compliments on these. I doubled the recipe and got 60. Used Napa Cabbage. 1 can sliced water chestnuts chopped. Cooked in oil on both sides. Removed from pan, drained on a papertowel, left for a while, came back and cooked in chicken stock instead of water to reheat...following directions by heating pan with remaining oil then adding stickers, then stock. For dipping sauce I used: 1/3c . soy sauce diluted with 2 Tbs. water, 2 Tbs. Sambal, 1/3c. rice wine vinegar, 1 tsp. sesame oil, 1/3c. sliced green onions

Refreshing Limoncello Cake

This isn't the prettiest cake but it makes up for it in taste! It was sooo moist and flavorful. Made exactly according to recipe. Did not need all the glaze. Raised above the pan so used the extra glaze to sample the crumbs cut from the edge. Will be serving with frest raspberries. Resturant quality!

Baked Potato Casserole

Nothing healthy about this recipe but boy is it good! Changed the prep a bit and changed only one of the cheeses. Used a combo crumble of cheddar and jack instead of cubed cheddar. Put the potatoes and onion in a skillet with some butter first to cut down on baking time. Just sauteed for a few minutes. I upped the oven temp. to 350 don't think it made a difference.
