Crispy Chinese Noodles with Eggplant and Peanuts

I don't know about this one. I do suggest taking the skin off the eggplant before cubing. I felt the red wine vinegar flavor sort of overpowered the whole dish. It is definitely an acquired taste. Boyfriend was less than enthused over this dish. I probably won't attempt this again, although it was not a difficult recipe...

Homemade Crispy Seasoned French Fries

Instead of frying, I BAKED these in the oven, which took about an hour or longer, but they came out nice and crispy on the outside. I just used flour, seasoned salt, cayenne and basil, then added half water and half oil to make a batter. I will make these again the same way! Yum!

Potato Pancakes I

Mmmm WONDERFUL! I used about 4 tablespoons of flour though b/c my potatoes were fairly large, and added some seasoned salt and nutmeg. Also added some chopped green pepper! YUM!!!

Shrimp and Crab Enchiladas

These are wonderful! I added cream cheese to the filling as suggested and reversed the ratio of shrimp to crab, using lump precooked frozen imitation crab meat, chopping it my processor and it was great! Everyone raved. So easy. Will make again...

Easy Red Beans and Rice

Yum! Easy and fast---I only used one can of beans, chili instead of kidney, and half a red pepper... and I totally forgot to add the oregano and pepper (I never add salt) and it still came out great, but next time I will definitely add the seasonings, as the pepper will give a nice kick. Great recipe!

Garden Veggie Pizza Squares

Yum!! I added a little mayonnaise (tablespoon) to the cream cheese and used vegetable soup mix instead of ranch, with carrots, broccoli and green peppers on top. Delicious!!!

Cavatelli and Broccoli

This IS sort of bland, but I cooked the pasta in chicken broth and added the broccoli to that the last few minutes, then added the garlic and sauteed the whole concoction before adding Romano Parmesan and red pepper. For some reason, I could not stop eating this, so-- bland or not, I thought it was pretty good!! The cheese and red pepper really add something. Plus it is sooooo simple...I will make again.

Garlic Cheddar Chicken

Love the flavor on this one! Had to cook slightly longer than 30 minutes but that was my fault as I forgot to pound the chicken thin. I covered it the during the last 10 or 15 mins of baking, as it was looking a little dry, but it came out very moist and juicy! Also used less cheddar than called for and omitted the salt. Common ingredients, easy prep...I will make this again.

Jollof Rice

The flavor of this is WONDERFUL, but there were a few things I had issues with. First of all, it needs to be pointed out that you need a HUUUUUGE saucepan, like a Dutch oven to make this with, or you will end up with a HUGE mess like I did. Also, cutting a whole chicken up into 8 pieces is not as easy as it sounds. I think I will use chicken PIECES next time. I subbed peas for the carrots and used jarred tomato sauce (i.e. pasta sauce) instead of the paste, and only one can of tomatoes. It came out great (despite what I mentioned above)!!!! This is a good one pot meal and you can vary your vegetables--very versatile. I will make this again (in a bigger pot :)

Ginger Shrimp with Fried Rice

This recipe was rather disappointing...I squeezed fresh orange juice in my juicer and followed the recipe pretty much to a tee, although I marinated the shrimp in the sauce for a few hours. The sauce just seemed very bland to me, not much flavor. It was edible, but I had to add mucho salt and pepper :-/ Maybe a dash of soy would spruce things up. I probably won't attempt this again though...Sorry...

Brown Sugar Chops

I sealed my pork chops in a little "tinfoil package" and placed them in a baking pan. I did not bake them uncovered at all, and they STILL were a tad on the dry side. Flavor wasn't bad, but did not penetrate the chops enough. I think I will stick to a similar recipe which uses lemon juice instead of butter, which tenderizes the chops nicely... Thanks anyway.

Orange Curried Chicken

The flavor of the chicken is very nice, but the sauce by itself is VERY sweet and a little overpowering on white rice. I used boneless breast and had to bake longer than instructed. This is definitely quick and easy to throw together, though. The curry gives a nice kick. I might make this again in a pinch.

Chicken Cacciatore from Sunset's Kitchens

Good recipe. I added green pepper and a little cooking sherry, and threw everything in my slow cooker. Also added some oregano, and used boneless, skinless individually frozen breasts. Omitted the diced tomatoes and the polenta. Easy and came out great. Good over rice.

Ham and Veggie Quiche

Mmmm...I used what I had on hand, which was diced potatoes, diced carrots, frozen peas, chopped onion and cooked, seasoned, chopped chicken. Mixed that with the cottage cheese and egg whites, and since I did not have mozzarella, I topped with 3 Kraft Singles slices and grated parmesan the last 15 minutes or so of baking. I used my round pie pan for this. It came out DEEEElicious! Easy and healthy! I will make this again!

General Tsao's Chicken

I think maybe I did something wrong because I scaled the recipe down to 2 servings, but the coating on the chicken started to burn up before it was even cooked through, and the sauce turned immediately to paste when I cooked it. The flavor was interesting, but I think you could add some vegetables to the mix. I may try this again...

Shrimp Versailles

Changed this recipe a little--used garlic instead of onion and a Monterey cheddar mix instead of Swiss, and also added some cayenne pepper. Instead of broiling in the oven, I just added some cooked rice to the sauce on the stovetop and ate it like that! Yummy! The flavor is very nice with just a slight kick---Easy and quick too. I will make this again!
