Chicken Breasts with Balsamic Vinegar and Garlic

Mmmm, this is very easy and very good. However, it is very similar to another recipe from this site which also calls for diced tomatoes and I like the flavor and texture that they add, so I would probably stick to that one. But this is good...

Curried Couscous

I only used one apple, unpeeled, but everything else the same. This was very tasty! I think the chicken broth really helps balance out the sweetness. It was a nice accompaniment to my baked rainbow trout...

Fish in Foil

Delicious! I seasoned my fish with lemon pepper and pressed fresh garlic, and left the lemon out, so that we could squeeze our own onto individual portions, but left the rest of the recipe as is. This is a great way to prepare trout---it comes out tender and juicy. Wow! My only regret is that I didn't add more jalapenos. Yum!

Harvest Thyme Rice

This was a little too sweet for our liking. Perhaps the fact that I used orange juice instead of apple made a difference; perhaps it is just a personal preference. In any case, I think the only thing that saved this for us was the pine nuts, as they added a bit of a savory flavor. I won't be making this again, but thanks anyway...

Delicious Black Bean Burritos

I added chopped carrot, chili powder, cayenne, cumin and nonsalt seasoning to the mix, then put shredded Colby Jack and lettuce in my burritos, and ate them with sour cream! Yummy! I accidentally left out the jalapenos (which I purchased specifically for this recipe---oops) and they were still wonderful. Quick and easy too. I made two large burritos and still have enough black bean concoction for probably another three...Very filling. Great for a quick lunch!

Garlic-Lemon Double Stuffed Chicken

Wow!!! The boyfriend and I both agree---five stars on this one! I found this easy to prepare, but with a restaurant quality. I used low fat cream cheese, but this IS very rich. DELICIOUS! My chicken breasts were rather thick, so I baked them for a little over an hour. They were worth the wait! I will make this again--(in fact, we will be eating the leftovers for dinner again tonight :)

Eggplant and Pepper Parmesan Sandwiches

WOW! This was excellent--although I did tweak it a LITTLE: I used ciabatta bread, cut in half and spread with an olive feta tapenade, used green pepper instead of red and topped the sandwich with shredded Colby Jack, then warmed the whole thing in the oven until the cheese melted. My boyfriend raved. This sandwich has a very gourmet feel to it and is so simple to make! Very filling also; great served with a side salad. This recipe is a keeper!!!

Indian Sweet Bread

I hate working with dough, but this is a REALLY simple recipe and I loved the sweetness of the bread. I used about a teaspoon of sugar or so with each golf-sized dough ball and these came out wonderful! I will definitely make again, maybe using some other spices too. Yum!

Roasted Red Pepper Lasagna

I don't think this makes enough sauce for a 9 X 13 pan. I did a 9 X 9 square and it came out good. I also added some cottage cheese into the second layer and used jarred roasted red peppers instead of roasting them myself. I used half the crushed tomatoes called for and added diced tomatoes (balsamic vinegar flavor from a can) and topped it with cheddar cheese. My white sauce came out just fine--YUM! Overall, very tasty, just needs more sauce...

Sesame Lime Steak Wraps

Wow! This dish was awesome. I cut back just a little bit on the lime juice and used ground ginger instead of fresh. I marinated the meat for 30 minutes exactly, then cooked it in my wok and it came out GREAT! I served in tortillas with lettuce, tomato and shredded cheese with Teriyaki Rice. Yum! My boyfriend raved. I will use this again---

Can it get any simpler?! I used a Dole iceberg salad out of the bag, grape tomatoes, salt, pepper, mayo and omitted the onion. Wonderful! What a quick and tasty way to make tuna salad...

Curried Coconut Chicken

This is excellent. I used tomato paste mixed with water instead of tomato sauce, and added cumin, ground cloves and turmeric along with some frozen peas, and an extra tablespoon of sugar. All my boyfriend kept saying was, "Delicious. Absolutely delicious!" and then practically licked his plate clean! This was easy to make and very flavorful, and I will definitely make it again soon.

I pretty much followed the recipe exactly, except used 2 chicken bouillon cubes and about 2 cups of water instead of broth, and added a can of peas, liquid and all, at the end. Delicious!

This came out a bit bland. I cut back on the red pepper because I am not a big fan of spicy food, and added some peanuts and sesame seeds, but it just seemed to be missing something...
