Thai Chicken with Basil Stir Fry

Grilled Salmon I

Delicious. I ended up marinating the salmon overnight, then placed salmon along with all the marinade onto foil, to which I added some frozen broccoli and carrots and sealed it all up into a packet. I then baked it at 400 degrees for about 25 minutes; the salmon was not quite done, so I opened the packet and let it bake another 15 minutes or so. Came out great served over rice. Nice flavor that doesn't overpower the salmon.

Thai-Style Chicken with Noodles

This was pretty good and quite easy. I used 2 green hot peppers and one red (they were small)from a jar and left the seeds in. I also added, garlic, green pepper, curry powder and doubled the soy. I threw in some frozen peas and a chopped fresh tomato as well. After a taste test, I liberally salted and peppered and added more curry. It was a tad bland before tweaking, and I still felt it needed something. Next time I will add a bit of peanut butter. It was sufficiently spicy and the noodles sopped up the sauce nicely. I used lite coconut milk and found the consistency to be perfect. ALMOST restaurant quality in my estimation.

Cheesy Creamed Spinach Casserole

This was great! I was looking for something quick and easy to take to our Easter family dinner with what few ingredients I had on hand and this fit the bill. I only used 16 oz of spinach, used a little over half the packet of onion soup, added pepper and paprika, and topped with swiss and colby jack cheeses. It went pretty quickly at dinner and was very tasty and creamy, even with using a combination of low fat and fat free sour cream! I will make this again, especially since it is so SIMPLE! Great recipe! (NOTE: In the recipe it says spinach, cooked, but I think this should say THAWED, as I thawed mine for a few mins. in the micro and the casserole came out perfect.)

Creamy Swiss Chicken

Very good. I cut back on the wine to about 3/4 cup and doubled all other spices, plus I salted and peppered my chicken before topping with Swiss. I used Italian seasoned bread crumbs instead of the croutons. Had a nice amount of zing and the boyfriend loved it. Reheats well too.

Tater-Dipped Eggplant

I will never bread eggplant any other way! I KNEW potato flakes were good for something aside from mashed potatoes!! I added some parmesan, basil and no-salt seasoning to the mix and ommitted the salt, but next time I WILL add a little salt b/c I feel it was needed... Also, make sure you use the full amount of butter or coat the slices with it before baking, b/c I cut the amount and some of my slices would not brown on both sides after I flipped them. You could also spray these with nonfat Pam or an olive oil spray for a healthier version... In any case, these are delicious and I will use potato flake breading for EVERYTHING! Can't wait to try it on fish!!!

Marrakesh Vegetable Curry

This was very tasty. I only used one green bell pepper, added ginger, used pine nuts in place of almonds, doubled the raisins, ommitted the zucchini, totally forgot the spinach and instead of orange juice had to use Capri Sun!!! It came out great. Pretty quick to make even with chopping up the vegetables, which really isn't THAT time consuming. Nice combination of flavors.

Baby Spinach Omelet

Not bad! I added chopped green onions, a tbs or so of milk, half a roma tomato and some garlic powder to the mix, and subbed mozzarella for parmesan, then topped it with a little cheddar at the end of cooking, and folded over omelet style. It was quite good, and filling!

Spicy Sonoran Beef Tacos with Cranberry Pico

WOW. I did not have fresh cilantro (used dried) but I have got to say that nevertheless the cranberry pico was excellent! I put it in with strips of steak wrapped in a flour tortilla and it was DELICIOUS! Very gourmet. I will definitely make this again. I think the pico would complement fish or poultry as well. Great recipe!

Addictive Sweet Potato Burritos

Oh yeah, I could see how these would be addictive. Yum! I threw in some red, green and yellow peppers with my onion and garlic, and used canned chili beans instead of kidney. I added a little cilantro as well and ommitted the soy sauce. Added a dollop of sour cream right inside the burrito and these were delicious!! Very filling...

Baked Sweet Potato Sticks

The best way to eat sweet potatoes! You can use any spices you like. I usually cut mine into slices as opposed to sticks and I also toss them in a ziploc bag to coat with oil and spices. Easy, healthy and delicious!!

Country Quiche

This was very good. I added some spinach while sauteing the onions and also added dill to the spices. Even though I (OOPS) used a graham cracker crust which was a tad sweet for this dish, it came out very tasty and was still quite edible! :) I will make this again with a regular pie crust.

Chicken and Pasta Casserole with Mixed Vegetables

I used two cups of pasta and cut the soup down to one can. I think the recipe would be way too soupy as written. I was out of bread crumbs, so I just topped the casserole with parmesan. It came out pretty good and is a nice, easy, one-pot meal for nights when you don't really feel like cooking.

Baked Linguine with Meat Sauce

Mmmmm. I ommitted the beef, used jarred pasta sauce (instead of garlic, crushed tomatoes, paste, sauce, sugar and salt) and left out the green onions. I also used penne pasta in place of linguini. I only used half the sour cream and cream cheese called for. I mixed the pasta, cream cheese, sour cream and pasta sauce all together and baked it in a round pie pan, adding the cheddar at the end as directed. It came out great and the boyfriend loved it. Yum!

Simply Parmesan Chicken

This WAS quick and easy, and the chicken DID come out tender and juicy, but I can't say I was all that impressed with the flavor. I used shredded mozzarella instead of the shredded parmesan, but I think if I make this again I will use cheddar to spruce it up a little. IF I make this again...

Yummy Sweet Potato Casserole

I used three medium sized sweet potatoes, used only 1/4 cup of milk and 1 egg, a little more vanilla than called for, substituted cashews for the pecans, and baked this in an 8 X 8 square pan. It came out perfect!

Mmmm...I used salsa in place of the diced tomatoes, skipped the onion and cut back on the cilantro and lime. This recipe is a keeper! Simple and delicious!
