Breakfast Crisp

I used packets of flavored oatmeal (i.e. Bananas and Cream, Peaches and Cream, etc.) and this came out great! Like oatmeal cookie bars. As other people have pointed out, the batter is thick and you don't really "pour" it into the pan but rather press it in. It's quick and easy and good.

Mara's Pork Chops

These were pretty easy to make. I substituted ketchup for the tomato juice, and added some garlic powder, dried mustard and worchestershire to the sauce. The chops came out nice and tender with a good flavor. Overall, a decent recipe...

Microwave Oven Peanut Brittle

I actually made this last week when I found this recipe posted on another site. It is GREAT! So easy and comes out perfect! My boyfriend didn't believe that I made it; thought it was store bought. I will make this again and use the suggestion below to add a layer of chocolate. YUM! Highly recommend...

Quick and Easy Mexican Chicken

Quick, easy and great! I didn't bother browning the chicken before baking, just used thawed tenders and sprinkled them with cumin, pepper and minced garlic before adding the salsa and cheese. I baked for about 35-40 minutes and it came out perfect! Nice recipe with common ingredients. I recommend giving this a try.

Chicken Hurry

I liked this. It DOES taste like sweet and sour chicken. I cut back on both the sugar and onion soup so it wouldn't be so sweet/salty. It had a nice flavor and my boneless chicken breast tenders came out VERY moist. I threw some spinach in too to bake and it soaked up the flavor very nicely. Easy and fast.

Pork and Potatoes

This was good. Nothing fancy, but very easy and tasty. I cut the recipe in half, using only the cream of mushroom, and covered the pan with foil while it baked. Cook time was a little bit longer than stated to get the potatoes nice and tender. I ate this over white rice which was great with the sauce.

Old-Fashioned Cheese Potatoes

I found these to be very BLAND (although I must say there was not a morsel left of these at the end of dinner, and there were 2 other potato dishes to choose from). I used a mild cheddar so maybe that was the problem, although if I try these again I think I will use a sharp cheddar and layer some in along WITH the cheese sauce and also add more salt and seasonings and perhaps some chopped onion. I wasn't wow'ed by these, but people seemed to like 'em! Go figure!

Birds' Nests

These were a hit! In addition to being adorable, they actually TASTE good too! Took them to Easter dinner and they were "awww'd" over and gobbled up. I too added some marshmallow creme and also green food coloring, and used a muffin pan to shape them. Super easy and quick to whip up. I would do these again...

Maria's Pepper Steak

I used chicken instead of beef and substituted balsamic vinegar and a dash of white cooking wine for the red wine vinegar (didn't have any) and I thought this came out great! I also added some black pepper and crushed red pepper near the end of the cooking time for a little kick. I ate it over Ramen noodles and it was very tasty. Easy and quick too. I will make this again.

Spanish Rice Original

This was pretty good. Nice flavor though a little salty. Definitely don't need to ADD salt to this one...I added some diced chicken to make it a one pot meal. I liked it with shredded cheese and sour cream on top. Mmmm... Oh-- and I used brown rice so it took FOREVER to get done but it came out fine.

Modenese Pork Chops

I found this to be a bit bland for my tastes...but to be fair, I did this in the slow cooker as opposed to stove top, so that may have made a difference. I DID double all the seasonings though, but I also added a wedged sweet potato and carrots, so maybe they soaked up all the flavor (although they seemed a bit bland as well). If I were to try this again, I would add more salt and some other seasonings perhaps...Thanks anyway.

Pumpkin Dessert

This is excellent! I halved the recipe, used a French vanilla cake mix (Mmmm) and cinnamon instead of pie spice and left out the nuts. Came out great, BUT---is even better the next day nuked in the microwave for about 30 seconds. The top gets all gooey and moist and WOW, is it ever delicious...A must try! I'm taking THIS to Thanksgiving!!!

Spinach and Rice (Spanakorizo)

Okay---the FLAVOR on this is GREAT, but the cooking directions seem wrongWRONGwrong!!! I cooked this for nearly 40 minutes uncovered and the rice was still crispy and uncooked! I think if you cooked this for 25 minutes COVERED, it would come out perfect! As I said, the FLAVOR is great. Don't leave out the lemon. I used parm instead of feta. I will definitely make this again---with the LID ON... ;-)

Decadent Pumpkin Muffins

I basically cut this recipe in half, using 2 whole eggs instead of whites separated, I used chocolate mousse yogurt cuz that's what I had, and added some chocolate chips (which next time I will leave out b/c I didn't really feel they "went" with the pumpkin muffin flavor). These are great (even with the choco chips!)!! They are dense and moist, more like a pumpkin BREAD but in a muffin cup! Excellent! I will definitely make these again (minus the chips).

Quick and Easy Ham with Sweet Potatoes

This is very tasty and easy! I used fresh sweet potatoes so cooked them on my Foreman Grill first so they were tender. I used the cooked ham that comes in the 1 pound can. I also added deli mustard to the ham after reading other reviews. All in all, this was very good. I think next time I may put the ham on top instead of the bottom so the juices saturate the sweet potatoes better. I will make this again...

Ham and Cheese Pasta Bake

I tweaked the recipe a bit, cut it in half, didn't use exact measurements on the ingredients but close enough and used a Mexican mix shredded cheese instead of the mozzarella/parm and it came out great! I like how quick and easy it is and the fact that the pasta cooks while in the oven...Pretty tasty!

Because this was SO quick and easy and tasty I have to give it five stars! I also added in some fresh spinach and a dash of powdered ginger, some chinese 5 spice and a little garlic pepper. It was great and done in under 10 minutes from start to finish. I'll make this again...

Chap Chee Noodles

Easy, quick and tasty! I left out the green onions, salt and noodles, added some dried red pepper for a little zing and ate this over rice. Used chicken instead of the beef. Use bagged coleslaw mix and it doesn't get any easier than this!

Pasta Carbonara II

Mmmm...This was good. I have never had carbonara before so I can't compare but this was tasty! I used angel hair instead of spaghetti and didn't have any pimentos. I left out the salt b/c ham, bacon and parmesan are very salty. Other than that, followed the recipe exactly but cut it in half. This makes a LOT! Very filling.

Colombian Chicken

I didn't use a whole chicken, but rather a couple of boneless, skinless breasts so my measurements were a little different and I am not big on exact measurements anyway, but the basic flavor I am sure was the same. Oh, and I had no red pepper so omitted those. I used freshly juiced OJ from my Juiceman and I thought the flavor was very nice. Different, but nice. I think maybe some white rice would have sopped up the sauce very well, but I didn't have any. Never having had Colombian food, I can't comment on that, but overall this was pretty good and easy to make.
