Banana Crumb Muffins
Great recipe! My family LOVED! Used plain nonfat yogurt for the butter and added 1/2 tsp cinnamon and 1/4 tsp nutmeg.

Broiled Tilapia Parmesan
Pulled some tilapia out of the freezer tonite, and this was the first recipe I looked at. I made the recipe exactly as stated. My 3 kids and I ate every bit of this and they were asking before dinner was over when I was going to make it again! Served it with confetti rice...I cook any leftover veggies (I like celery, onion, shredded carrots, peas, corn or whatever) with a tiny amount of oil and garlic...then add chicken broth and brown rice and cook it all together. My husband does not care for fish at all, so this will become a meal that we will eat whenever he is traveling! THANK YOU!

Mixture for Meatballs, Meatloaf or Burgers
I have already used this recipe several times. My kids love meatballs with their spaghetti and this one works perfect. I scale the recipe to use 3# of hamburger, and it makes about 75 small meatballs. I bake them in the oven, use what I want for that meal and freeze the rest. (I freeze them on a cookie sheet first then pop them into a ziploc bag) For birthdays, I make BIG meatballs and the kids get a kick out of getting one large meatball! GREAT recipe! THANK YOU!
