Refreshing Lentil Salad

So funny that this is the recipe of the day today because I found it yesterday and made it last night! Everyone here really liked it. It's simple and quick but tastes great. Watch carefully, though, it doesn't take 30 min to bake. Our fillets were frozen and it was more like 15 min. I'll make this regularly.

Split Pea Soup with Tofu

Raspberry Buttermilk Muffins

Definitely fits my criteria for a five star recipe. IMO this does NOT need extra sugar nor an extra egg. I found them wonderfully sweet and almost biscuit like. I took another reviewer's recommendation to put some batter in the muffin cup and then add some berries (3 in my case), fill with more batter and then just put one berry on top. Oh and I put the juice of half a lemon plus milk to make the one cup and put the grated rind of half a lemon in the dry ingredients. Turned out better than I hoped. My family and neighbours love them. :)

Barley, Shrimp, and Corn Salad

Excellent! Very fresh tasting. I added lots of fresh parsley at the end and we all LOVED it here. My son and I are big shrimp fans and I'm always on the lookout for tasty recipes so thanks!

Sweet and Mild Cooked Tomato Salsa

I have been looking forever for a salsa that suits my taste and this is the one! I don't like a lot of heat so I didn't add any hot pepper sauce. I love the fresh, sweet taste of this and I can't wait to make it when the tomatoes in my garden ripen in another month or so!

Cocoa Quickies

So yummy, sweet and a nice treat that is easy to make. I appreciate that there is no peanut butter as is the case with most no-bake cookies. I was able to send them with my son for a camp bake sale. Thanks!

Spinach Basil Pasta Salad

Awesome salad, everyone loves this. I'm vegetarian so I left out the prosciutto but added salt with the pasta cooking water as another reviewer suggested and it's perfect. I will make for company next time.

Good Old Fashioned Pancakes

The best pancake recipe I've ever tried, hands down. I use ghee (clarified butter) to cook them - gives a delicious buttery taste but doesn't burn like butter.

Blonde Brownies I

Excellent!! These are now a staple at my house because they are so easy to put together and everyone loves them. I also doubled and baked in a 9x13 pan, allowing about 25 minutes in the oven. Also left out the nuts and mixed the chocolate chips right in. Also good with milk chocolate chips. Yum!

Brown Sugar Banana Nut Bread I

Very banana-y flavoured with 4 bananas. Also wet in the middle even after baking for over an hour. Otherwise very happy with the way it turned out. Will decrease bananas to 3 next time.

Pumpkin Spice Cake with Cinnamon Cream Cheese Frosting

This cake was definitely good, although reduce the baking time if using a glass pan like I did. I think I may have over baked just a bit. It was nice and light after a heavy Thanksgiving meal. I used Cream Cheese Frosting II from this site which really made the dessert. No cake mix taste was apparent. Everybody loved!

Dill Sauce
