Tuscan Sausage and Chard Soup
Excellent and modifiable. used very lean ground italian sausage, and mixed greens instead of swiss chard. i also used turkey stock instead of chicken broth and added some crimini mushrooms. FANTASTIC!!!

Quinoa and Black Beans
Very suttle flavors to this recipe. I modified it a bit for fun. First I recommend soaking the quinoa for 30 minutes or more to reduce bitterness. I added kale this time I cooked it to make it a nutritional powerhouse and even the picky kids ate it! My husband added some "Voodoo sauce" to make it extra scipy. Next time I think I'll try switching out the corn with some red or yellow bell pepper and add some summer squash or zucchini instead. Great core recipe to be eaten as is or with substitution! A++ thanks!
