Toasted Pumpkin Seeds with Sugar and Spice

New family tradition! Each year my family roasts the pumpkin seeds from our Jack O'Lanterns and we've used various recipes...all of which were good, but unmemorable. This is a fantastic spin on our tradition, mixing a sweet taste with a salty kick. Wish Halloween came around more than once a year!

Tropical Shrimp Dipping Sauce

This was pretty good! It's very sweet -- my kids kept saying, "It tastes like ice cream!" -- but it's perfect for a summer BBQ. Since my family won't eat shrimp, I pan-seared some chunks of chicken, seasoned with a little garlic, salt and pepper. I served it with brown rice and a green salad, making a lovely, light meal on a hot summer day!

Jennie's Heavenly Slow Cooker Chicken

Wow...this was fantastic and made enough for delicious left-overs the next day. I didn't bother with heating everything in a saucepan...I just mixed it all together and poured it over the chicken. It was perfect! Served with pasta and a salad, this was a meal that will be used a LOT in our home!

Light and Fluffy Spinach Quiche

Super yummy and super easy! Like others, I added an egg and sauteed the spinach and onion (with a bit of fresh garlic) before layering with cheese and egg mixture. Set up beautifully and was a hit with the family -- even the kids! Next time, I'll add a little salt, but otherwise a great recipe!

Sugar Cookie Icing

Like many others, I had to tweak this recipe a little bit, to satisfy my own ideas of what kind of consistency it should have. Otherwise, though, it was great with a yummy, unique taste. It's important to note that this is an ICING or glaze, not a frosting. I think some of the negative reviews may have come from people expecting a frosting-like consistency.

Bebop Baked Beans

I've never been a fan of baked beans, so when I was asked to bring some to a party, I nearly groaned out loud. So glad I found this recipe - it changed my whole perspective! It was fun overhearing party guests saying things like, "These beans are delicious!" and "Who brought these beans?" These will certainly be made again!

Pretty Chicken Marinade

I ended up not being able to use my grill for this recipe, so I just baked the chicken after a couple of hours or marinating. It was delicious and I imagine that the grilled variety is even better! My kids and husband gobbled this up, making it a big hit for our family!

Chicken Satay with Homemade Peanut Sauce

This recipe was a big hit at our block party! I substituted red pepper flakes for fresh red peppers and it tasted great -- a perfect little kick at the end. I've already shared this recipe with a number of people, as everyone was asking for it!

Lime Fish Tacos

These got a rave review at a party we attended. I used Tilapia and added a couple of extra dashes of pepper sauce to the topping. It was delicious and super easy! I can't wait to make this for my family!

Different Chicken Divan

I've made various Chicken Divan recipes in the past and while this one is pretty true to the traditional recipe, it's definitely got a bit of zing (and crunch) that is added by the onions on top. It's really delicious and my family is already asking when I am going to make it again!

Chocolate Bar Fondue

Wow! What an easy and delicious fondue! I took the advice of other reviewers and eliminated the water. It was the perfect consistency for dipping marshmallows, graham crackers and pretzels. I also used two shots of Bailey's Irish Cream in lieu of the coffee and it was fabulous. I am sure you could add any favorite liquer (Bailey's, Grand Marnier, etc) and customize the flavor.

Christmas Breakfast Sausage Casserole

Yum! This was so well-received in our house on Christmas morning! I took the suggestions of other reviewers and used maple sausage, as well as six eggs. The casserole set up perfectly and was delicious. I love the taste of mustard, so I'll likely add more next time. We're looking forward to enjoying this again and again! Thanks for the great recipe!

Real Hummus

Finally! The hummus recipe I've been looking for! Who knew it could be so easy? I failed to read the author's updates, so I made the recipe in its original form, with two tablespoons of tahini. I'm looking forward to trying three. Delicious and easy to "personalize" with added juice from the beans, more or less garlic, more or less lemon, etc. If you're looking for great hummus, look no further!

Chocolate Banana Bread

You've got to love chocolate to love this recipe and luckily, I do! Rich and dense, this is almost like a pound cake. I used individual fluted tube pans and reduced the cooking time to 40 minutes. It yielded roughly ten (10) individual loafs, perfect for Christmas gifts for the neighbors. This will be an annual recipe for our family!

Enchilada Casserole II

I love this recipe. I made it a few years ago, but now that our family has grown by two more mouths, I needed a larger dish to feed them all. I used 2 lb. of beef, upped the spices by a teaspoon or so, but kept the tomato paste and sauce at the original amounts -- that helped to cut down on the very tomato-y taste. I also added a layer of corn, a layer of black beans and some chili peppers. I used twice as many tortillas and layer two at a time, side by side in a 9x13 dish. It was fantastic -- all my kids ate it up!

Linda's Lasagna

Yum! This was great! I made it for a 20-person family gathering and it got rave reviews. The sauce seemed a little salty before I assembled the lasagna, so I added some more sugar and it turned out perfectly. I can't wait to make it again and add in some fresh veggies, extra Parmesan cheese, etc.

This was excellent. I added some Old Bay, per other reviwers' suggestions, but I tasted the dip before I added the Old Bay and it tasted great. This one will be used again and again.
