Apple Crisp II

I had 4 apples to use up, so chopped them and split them among 4 ramekins. I split the recipe in half and it was perfect; I wouldn't change a thing. Easy and simple. I only had Trader Joe's ROLLED OATS on hand, and they worked great.

Taco Seasoning I

Exactly what I needed; measured it directly into the pan as I browned the hamburger. Let it simmer in the seasoning/fat for a while before draining off the fat. It was fantastic.

Sausage and Bean Ragout

Excellent; I had to make only a couple minor adjustments. First, I needed to use mild sausage, as I'm the only one in my house who likes "hot" (though I suspect, when mixed with the hamburger, it may contribute more flavor and not be too much for the heat-adverse). Second, I only had one can of the diced tomatoes as described, so for my second can, I used stewed tomatoes with the same spices (and cut the pieces up smaller). OH MY GOSH, as I'm typing this and reviewing the ingredients, I realized I forgot the spinach. Argh! Okay, well, it's great without it. (Update: SO I snuck in kale instead of spinach, as one reviewer suggested. It was exceptional.)

Oatmeal Raisin Cookies IV

Fantastic! My only modification was to omit the pecans. I'm not usually a fan of oatmeal raisin cookies, but these are the exception. I agree with other reviewers; probably the soaking of the raisins that sets this one apart. I also like the cinnamon; it's just right.

Sugar Cookies

I made two batches; one to make as traditional sugar cookies, and one to use with cookie cutters. I followed some reviewers suggestions and cut cook time to 7 minutes, which wasn't long enough for my taste - another batch in for 10 was better. For the ones I rolled out, I put the dough in the freezer for 20-30 minutes. With a lot of flour, I was able to roll it out and successfully used our Williams-Sonoma Star Wars cookie cutters for the first time. Definitely going to keep this recipe handy for an upcoming cookie swap.

Juicy Roasted Chicken

How could something SO simple be SO good? And if it is this simple, then how did I ever make a bad chicken? I don't know. What I DO know was that this was OUTSTANDING. I had a larger chicken (5.5 lbs) so I cooked it longer. There were so many drippings that I was able to toss in chopped carrots towards the end, and make gravy (by just whisking in some sifted flour) when all was done.

Simple Chicken Gravy

I had enough drippings to skip the water; I sifted the flour in to prevent clumps. Thank you; I didn't know making gravy was this simple. I trust it depends heavily on the quality of the drippings. I used another recipe for the chicken on this site ("Juicy Roasted Chicken") and it was OUTSTANDING.

Absolute Best Pancake Syrup

What did I do wrong??? I followed the recipe exactly. The aftertaste of the baking soda was unbearable. I'm in SUCH the minority here that I promise to give it one more try. I knew not to expect traditional syrup flavor; I had "Cinnabon" in mind. I sensed it was there, but as someone else said, the "carbonated" taste was overpowering.

Roasted Herb Chicken and Potatoes

This was DELICIOUS, and very easy. I followed the recipe closely, basting the chicken every half-hour (inside and out) and tossing the potatoes at that time to ensure they didn't dry out. My chicken was 5+ pounds, so took 2.5 hours. I covered the dish for the last 45 minutes. My husband LOVES soy sauce, but he didn't recognize that was the marinade base, so I don't think it's overpowering.

Sam's Famous Carrot Cake

Simply THE BEST carrot cake I have EVER had, and believe me... I've had many (it's my favorite cake). I was apprehensive about the coconut, but the flavor is subtle and delicious. I made them as cupcakes, and thought they were so moist that I skipped the icing (rationale being; save the calories so I can eat more cake). UPDATE: I just realized that I forgot the raisins! I'm so in love with them without, I think I'll purposefully pass in the future.

Mom's Buttermilk Pancakes

Delicious and easy. I used reduced fat buttermilk and didn't feel cheated; they were still fluffy and rich. I followed the recipe for measuring and yielded 8 pancakes.

Strawberry Syrup

Very good. I used a bag of thawed from frozen strawberries and ran them through the blender, which may have produced additional water, so I added cornstarch at the end to thicken them up. I look forward to using this as an alternative to store-bought syrup. Thanks!

Perfect Chocolate Chip Cookies

I'm on a quest for the perfect chocolate chip cookie, and while I don't typically try recipes that haven't been otherwise highly rated, I thought I'd try my hand at being the FIRST to rate one. The only ingredient I modified measurement on was the chocolate chips; I only had a 12 oz. bag and a little in another bag (probably another oz.). Seems like 12 ozs. is plenty; I wouldn't do 18. I creamed as directed, but specifically did so by hand using a wooden spoon. I used an ice cream scoop to ensure consistently-sized cookies, and lined the cookie sheet with parchment paper. My cookies came out delicious, and my husband prefers them to the last recipe I used (a Martha one), which I thought was my best yet. Thanks for sharing! I'll use this one again.

Banana Frittata

Very good. I didn't have the issues other described with flipping it (which was surprising, as I can barely flip an egg without disaster). I STRONGLY SUGGEST COVERING IT WITH A LID WHILE COOKING; I did that and it cooked without issue. I followed the recipe except that I mashed the bananas with a fork before mixing them into the batter. I only had a 3.5 qt. saute pan (stainless, not non-stick), but the butter and oil were more than adequate to keep it from sticking. I cut it into four pieces, garnished it with more banana slices, and sprinkled it with powdered sugar. I feel like I got away with having dessert for breakfast - YUM!

Almond Orange Crusted Chicken with Fennel Arugula Salad

I selected this recipe because I had a lot of arugula in the fridge. I was hesitant because I don't usually like fennel, but followed the recipe exactly and am glad I did. I suggest making more almond/orange zest coating - I ran out after the third breast (although in fairness, they were thick breasts). My almond coating burned to the pan, so next time I'll try another reviewer's suggestion and use parchment paper. I'm not sure if it made a difference, but I marinated the chicken in OJ while I prepared the coating.

Follow the recipe to the letter, and you will be rewarded with large, soft chocolate chip cookies. The coarse salt is a delicious contrast to the sweet chocolate.
