Taco Pie

I've been making this dish for years. Always a hit. The changes I've made over the years is instead of using a cake plate or pie plate I use a cookie sheet. Basically rolling the crescent rolls out to about 9x13 size (easier now if by using the sheet rolls). Lightly covering the dough with crushed corn chips rather than tortilla chips (more flavor);top with the meat mix; then covering the meat mix with sour cream; top with more crushed corn chips; then adding the grated cheddar cheese. Bake at 375 for about 20-25 minutes. By making it this way, it's easier to eat and the recipe stretches a little farther. I've also added a small can of sliced black olives. Enjoy!!

Sweet, Sticky and Spicy Chicken

I followed others advise about dredging the chicken in flour first. This adds a crunchy coating to the chicken - excellent! Also doubled the sauce and added a bag of stir fry veggies and chunk pineapple to round out the meal. The sauce wasn't real thick, but it worked out fine with the veggies. Instead of using regular rice we made a quick stir fry rice. Makes a quick wonderful meal. This is definitely a keeper.

Chicken Asparagus Roll-Ups

I've made this several times. First time I followed the recipe - excellent! The next time I had button mushrooms I needed to use, so I sautéed them in a bit of red wine & put them between the chicken & the cheese, then added the asparagus. I used tyme instead of tarragon in the mayo mix and put a bit of that on each breast before adding the other ingredients. I wish you offered 6 stars this deserves it.

Pumpkin Muffins with Streusel Topping

The muffins were fantastic, would give them 8 stars if possible. I used the the entire can of pumpkin (15oz.) and used whole wheat flour. I also used Butterflymamma's cream cheese filling - excellent!! & doubled the streusel topping. I dropped the filling by teaspoon onto wax paper & froze it before adding to the cupcake liners. Only sugestion, fill the liners 1/3 way, add the filling, finish filling the liners. It was hard to push the filling down into the batter without making a mess. Very moist, flavorful and unfortunately gone......
