Cuban Ropa Vieja

Just the recipe I was looking for. I was missing good cuban food when I moved to Colorado from Tampa. I used frozen pepper strips (yellow, red and green) added about 1/2 cup of green olives with their juice and a small jar of pimentos. Fabulous flavor! But please don't ruin it with sour cream and cheese!!! Serve with yellow rice and seasoned black beans and toasted cuban bread if you can find it. Also, the flavor really develops if you can resist and cook it longer not to mention it becomes much more tender. Thanks for the taste of home!!!

Spicy Refrigerator Dill Pickles

Very good and easy! Crunchy and flavorful. Next time I will omit the sugar though. I cut the sugar in half and they we still a bit too sweet for me. Plus, be careful with the red pepper flakes- alittle goes a long way!

Gooey Butter Cake III

Very good and easy to make although I did add an egg to bind them together a bit. I also used only half the cumin since my husband isn't a big fan of it. They turned out great. Thanks for introducing a new meat substitute to my dinner table!

Chili Sauce Chicken

Marinated mine overnight and they were great- even left over. Grill slowly or just like bbq sauce this sauce will burn. I generally don't care for dark meat chicken but this was delicious. I will definitely put this one in my recipe rotation.

Baked Potato Soup

Excellent soup, easy to make. Make it almost exactly to recipe with the exception of left out the basil (just seemed like a weird flavor combo to me) doubled the bacon and used whole milk instead of half and half. Turned out as good or better than restaurant quality. Will be making often! Might throw in some chopped scallions or chives next time.

Homemade Fresh Cheese

Thanks for the recipe! Fun to make and delicious. It's a great feeling to know what is in your food. Used organic whole milk and apple cider vinegar. I agree with another reviewer who mentioned the strong taste of the cider vinegar. Not at noticeable once you add seasonings and herbs though. Not 100% sure if I did everything right...brought the milk almost to a boil put in the vinegar and it didn't make a lot of curds. Poured it through the cheesecloth and the liquid still looked very much like milk not whey so I brought it to a slow boil added a little vinegar again and it curdled immediately. So I made one ball of very creamy and one ball of firmer cheese. Mixed them together and seasoned...turned out delicious! I'll be making this again and again!

Apple Pie by Grandma Ople

Perfect! My husband has bugged me for years to bake an apple pie for him but I never bothered since he LOVES his Mom's apple pie. I finally broke down and tried the recipe out. FABULOUS! I only gave it 4 stars because I did make some changes by adding cinnamon, nutmeg and vanilla. I also used pre-made pie dough and jazzed it up a bit by brushing it with a little melted butter then some milk and sprinkled with sugar. I definitely recommend this method-it was the best apple pie I have ever had and my husband agrees. Sweet but not too sweet and juicy without being runny. The crust was perfect using this method as well. You have to try this!

Tuscan Style Bean Soup

Delicious!!! My only changes were to use white beans instead of kidney beans which I don't like and added some zucchini. I love it and make a double batch so we have plenty of leftovers. I serve it with some crusty french bread and it's a filling meal which is a favorite in my house. Thanks for the great recipe.
