Spanish Chicken and Rice

Such a simple dish, yet incredibly moist and delicious! This is easy and will be a staple in my recipe rotation. I had to make due with what I had on hand: dry mustard for the turmeric, and omitted the pimentos.

Roast Sticky Chicken-Rotisserie Style

Awesome, amazing, YUM! I took this one step further by separating the skin from the meat (especially on the breasts) and rubbed the mixture directly on the meat. I allow it to "marinate" overnight in the fridge and cook it the next day. It is AMAZINGLY flavorful!!!!

Exquisite Pizza Sauce

This is very good but I found it a bit too spicy. I made it for Xmas gifts and have made it several times since, so I love the flavors and now add less of the pepper.

Scrambled Egg Muffins

Very good and easy to make. I did sub some of the eggs with egg beaters and that worked great! I didn't really taste the cheese, so I'd either use a little more or perhaps sliced cheese.

Curried Coconut Chicken

This was great, my BF raved for days! Easy to make with simple ingredients. My only adjustment was a little more cayenne & crushed red pepper for a little more heat. Served with Naan bread & chutney.

Garlic Cheese Flatbread

This flatbread dough was fast and easy to make, we loved it! The result was doughy and chewy yet baked well on the bottom and had great flavor. I will use this for pizza too!

Chewy Granola Bars

These were awesome, as is. I have also made them subbing some of the honey with agave nectar and some of the brown sugar with succanat, and both subs worked out great.
