About this Cook
I'm a native Hawaiian but grew up in south Texas and am now living in southwest SWEDEN with my husband and 3 kids.
My favorite things to cook
I love to bake! I love the way the house smells after a batch of cookies has come out of the oven, or a cake and especially apple pie. Yum!
My cooking triumphs
I think I make a mean cornbread! It's not too sweet and has been handed down in my family.
My cooking tragedies
The first time I tried making homemade tortillas was truly a tragedy. I used a tortilla press and held the handle down too long. What I got was a kind of see-through wafer that resembled communion! LOL

Four Egg Yellow Cake
What a delicious cake this is! My changes: I used butter instead of shortening, I doubled the vanilla and added 1/4 cup more milk. I made a Bundt cake and it was gigantic! (I also made a mini cake to taste test it in advance) A box mix would have given me 2/3 of the size I got from this recipe. I think the texture was fine, you can tell it is a cake from scratch, it has a different density but still tastes yummy! I plan on using chocolate frosting on it because it will be a birthday cake, but honestly, no frosting is needed! Thanks for a great recipe, it's a keeper!

Hot Breakfast Couscous
Fantastic!! I LOVE couscous and I used regular couscous (not the pearl kind). I made the recipe for just 2 people and left out the fruit, and added 1/2 c. more milk and 1/2 c. more almonds. This was so delicious! I really like the crunchy-nutty taste of the almonds, and the light sweetness of the honey. Super healthy, low carb and low salt too! Plus, I was full for the entire morning until lunch time, no cravings for snacks. Thanks so much for a yummy's already been added to favorites!

Frosted Banana Bars
Awesome recipe! Only changes I made was to add one more cup of bananas and bake it in a 9x13 pan. (I wanted more of a cake texture) I frosted it with Tom's whipped cream cream cheese frosting from this site and it was a HUGE hit! Thanks deltaj for a delicious recipe!
