Cranberry Chicken

This recipe caught my eye because it sounded like a good way to use up some left over ingredients from my Thanksgiving grocery shopping. I followed the recipe except for not measuring the cheese, stuffing, & cranberries. I'm sure I used more than called for. My family gives this one a thumbs up so I will make it again. It's super easy and looked kind of pretty with the cranberries on top. Add a veggie or salad and dinner is done.

Make-Ahead Turkey Gravy

This is going to be a regular for future holiday turkey dinners at my house. We normally smoke our turkey outside so I don't normally have the yummy pan drippings that you get roasting your bird in the oven. I loved being able to make this a day or two before the holiday. It makes it so much less stressful for me. I basically cut the recipe in half and used two wings. It made more than enough gravy to serve 10 and have plenty left over. I was skeptical how this would reheat but was great.

Slow Cooker Stuffing

Very convenient way to free up oven space for a big holiday meal. After reading the reviews, I only did about 1/2 the broth to start and because my cooker always seems to run a little hotter, I left it on the low setting. Eventually I thought my stuffing looked a little dry so I ended up adding a bit more broth to moisten it.

Baked Ham and Cheese Party Sandwiches

My family loves these! I'm sure they would make great party food but I've been making them to have as a quick dinner on busy weeknights. I make them ahead of time so that when we get home after a game we can pop them in the oven. Pair them with a side salad or a nice soup and you've got a kid/teen pleasing meal. I follow the recipe exactly except for maybe decreasing the amount of butter a little bit. My kids love them with cheddar cheese but adults prefer swiss cheese.

To Die For Blueberry Muffins

I've made many muffins over the years and a recent batch using this recipe yielded some of the prettiest ones I've ever made. My family thought they tasted as good as they looked. I didn't read the reviews prior to making this batch and followed the recipe exactly except for where noted in my review. I doubled the recipe and got 12 large picture perfect muffins. I didn't measure the amount of milk added and just eye balled it, gradually adding more until all of the dry ingredients were just mixed in. I had some excellent fresh blueberries and probably added a bit more than what is called for. I did not double the ingredients for the crumb topping and had much more topping than what was needed. I will definitely make this recipe again but will use a different crumb topping using more flour and brown sugar instead of white sugar. There is a banana crumb muffin recipe on this site that has a very good crumble topping. For those who tried this recipe and were unhappy with the results my suggestions are to fill the muffin tins just to the top and don't over do the topping. A light sprinkle is plenty. Also take a minute to brush away the extra crumbles that fall on the top of your pan. It will make clean up easier and keep the extra topping from melting around the tops of your muffins. If you have a good quality pan and lightly spray the inside of the cups with cooking spray, these shouldn't stick. With a different topping, this is a 5 star recipe!

Ladybug's Poppy Seed Chicken Casserole

Fans of poppyseed chicken will enjoy this recipe. What makes this one different from my usual recipe is the layer of buttery crumbs on the bottom of the pan in addition to a layer sprinkled on top. Of course this modification tasted good but for my family, I'll probably stick to my usual to cut back a little on the calorie and fat content. We definitely enjoyed trying this version though.

Strawberry Cake and Frosting I

I made this for a family birthday and was very pleased with how it turned out. I used white cake mix and a 14 oz pkg of frozen strawberries that did not have any type of syrup. The cake was really moist and a very pretty pink color. By itself it did not have much of a strawberry flavor. I baked it in a 13X9 pan. I made 1/2 batch of the frosting, draining the juice from the strawberries. Everyone loved the strawberry flavor off the frosting and the little bits of fruit in it. The consistency was fine to work with for a 13X9 but maybe a little thin to do a layer cake. I would love to try this recipe in a bundt pan and make the frosting thin enough to drizzle down the sides.

Slow Cooker Chicken and Dumplings

As written, I give this recipe mixed reviews but I do think it could be made into a 5 star with a few modifications. I used chicken broth instead of water and added more seasoning as many others have suggested. My issues are with the dumplings. I used Grands biscuits. They were still quite doughy after 30 minutes on high but were okay after 1 1/2 hours. My cooker has a metal insert and the dough on the outside cooked better than the dough in the middle. I found myself stirring them around for more even cooking. There was definitely a canned biscuit taste to the dumplings that the adults didn't care for but kids who love chicken and dumplings gobbled them up. Next time I would try making my own dough. I believe I've seen frozen dumplings in the grocery. I might try those or perhaps frozen noodles next time.

Slow Cooker Scalloped Potatoes with Ham

My family gave this one a thumbs up and it was super easy to leave in the slow cooker. I cooked it on low (newer cooker which tends to run hotter than older models) and used Half & Half in place of the water. We were having ham slices so I put them across the top of the potatoes with just enough cooking time left to warm them nicely.

Baked Pork Chops I

I was serving a larger group so I had a couple more chops than called for. I did 1 1/2 times the breading mixture and double the gravy. My family enjoyed it but next time I would play around with the gravy mixture. I personally would have liked it to be a little less cream of mushroom. Maybe by using 1 can golden mushroom as mentioned in some of the other reviews. I made a couple of chops without the gravy for a picky children. They baked nicely too.

Chicken Enchilada Soup III

If you like Chili's popular soup, I think you will like this recipe. I had very good luck with it. I prefer to bake my chicken wrapped in a little foil and shred it so that is how I prepared it for this recipe. I also used an extra can of chicken broth instead of the cup of water to add to the soup. I had mild enchilada sauce so I added extra chili powder and a little red pepper to give the soup a little more kick. Mesa de Harina is easy to find where I live and I often use it to thicken and add flavor to our favorite chili. I gradually added the Mesa to the 2 cups of water and whisked it until it was smooth. I gradually added the Mesa/Water mixture to the soup and whisked the soup in the pot. I added the entire amount but you could easily omit some of it if the soup becomes too thick. I did not have any problems with the texture being too gritty as mentioned in some of the less favorable reviews. I did not add the shredded cheese, allowing everyone to add it to their individual bowls of soup.

Slow Cooker Vegetable Beef Soup

There are many versions of this recipe available which makes it perfect to customize to your personal taste. I started with browned ground beef from my freezer to speed up prep time on a busy day. . I used frozen veggies instead of canned and also added a can of tomato sauce to give soup a little more tomato-y flavor. Serve with a sprinkle of parmesan cheese and warm crusty bread and you have a great meal that appeals to oth adults and kids.

Pumpkin Bread IV

Spanish-Style Rice

I was looking for an qucik easy side dish to go with Mexican food and this recipe was perfect. I used a different brand of chicken broth that was a larger size so I decreased the amount of water used accordingly. I didn't have peas on hand so I left those out too. I think this recipe could also be good with corn and black beans added. Super easy and lots of ways to adjust to fit your own tastes.

Chocolate Muffins

Very easy recipe, I followed other suggestions and decreased the flour and increased the cocoa. I also used close to a full cup of chips. In the middle of the recipe, I found that we had run out of milk. I improvised by adding a bit more sour cream and a splash of coffee liquor (borrowed the idea from my favorite chocolate cake recipe) The results were very muffins that were very moist and cake like. Made for a special breakfast treat that my kids loved!

Heather's Grilled Salmon

Very good results. I have made this several times. I've followed the recipe exactly and once used italian seasoning blend because I was out of basil. Turned out great both ways ! I have also found that I can cut back a little on the oil to decrease the fat without sacrificing a thing on this yummy marinade. I'll definitely make this one again and again.

Pumpkin Dump Cake

We loved this recipe! I've made dump cakes before and this pumpkin one is a nice change for pumpkin pie lovers. I used a yellow cake mix because that is what I had on hand and used closer to 1 cup of butter to dizzle over the top. As it is baking, if you see a little dry patch of cake mix on the top, put a tiny sliver of butter on the spot and it will blend in. This is absolutely yummy with bit of whip cream. A great holiday recipe that I will make again.

Proper English Cottage Pie

Very easy and great comfort food. I followed other reveiws and left out the cinnamon. I was worried that the potatoes would be too runny so I didn't use a full cup of milk with I mashed them. We thought the meat had a very nice flavor. I would make this again.
