Spanish-Style Rice

I was looking for an qucik easy side dish to go with Mexican food and this recipe was perfect. I used a different brand of chicken broth that was a larger size so I decreased the amount of water used accordingly. I didn't have peas on hand so I left those out too. I think this recipe could also be good with corn and black beans added. Super easy and lots of ways to adjust to fit your own tastes.

Chocolate Muffins

Very easy recipe, I followed other suggestions and decreased the flour and increased the cocoa. I also used close to a full cup of chips. In the middle of the recipe, I found that we had run out of milk. I improvised by adding a bit more sour cream and a splash of coffee liquor (borrowed the idea from my favorite chocolate cake recipe) The results were very muffins that were very moist and cake like. Made for a special breakfast treat that my kids loved!

Heather's Grilled Salmon

Very good results. I have made this several times. I've followed the recipe exactly and once used italian seasoning blend because I was out of basil. Turned out great both ways ! I have also found that I can cut back a little on the oil to decrease the fat without sacrificing a thing on this yummy marinade. I'll definitely make this one again and again.

Pumpkin Dump Cake

We loved this recipe! I've made dump cakes before and this pumpkin one is a nice change for pumpkin pie lovers. I used a yellow cake mix because that is what I had on hand and used closer to 1 cup of butter to dizzle over the top. As it is baking, if you see a little dry patch of cake mix on the top, put a tiny sliver of butter on the spot and it will blend in. This is absolutely yummy with bit of whip cream. A great holiday recipe that I will make again.

Proper English Cottage Pie

Very easy and great comfort food. I followed other reveiws and left out the cinnamon. I was worried that the potatoes would be too runny so I didn't use a full cup of milk with I mashed them. We thought the meat had a very nice flavor. I would make this again.

Hawaiian Bread II

I had good results with this recipe following it as is with the exception of adding 1/2 teaspon of coconut extract. I also considered s similar recipe that included that coconut extract, so I thought why not. I was concerned that this dough did not rise as much as I expected it to. I had to set it out much longer than specified and it still didn't rise as much as I would have liked. Since so many reviewers suggested salt, I will definitely try adding some next time I make this. The flavor of my bread was very yummy but I wish my loaves were a little more rounded. Mine were definitely not flat but not as pretty as the ones pictured in many of the photos on the site.

Cathy's Creamy Chicken Bake

My kids all love chicken casseroles that have cream of chicken soup as one of the ingredients so I decided to give this a try. I think you could easily use bread crumbs or cracker crumbs in place of the stuffing and get good results.

Weekday Pot Roast and Vegetables

I had a couple of cans of Campbells gravy to use up so I decided to give this a try. Super easy & turned out pretty good. My crock pot roasts are always done in less time than this recipe specified so check often and use a meat thermometer.

Scallop Scampi

This was just okay for us....I followed the recipe exactly except for using Ramano/Parm blend. The cheese clumped up and the sauce too runny, although it did have a very nice flavor. In the end, I drained off much of the liquid, added some more cheese, & seasoned it a bit more so we could eat it. I wish I would have tried to thicken the sauce a little more using corn startch but didn't want my scallops to be over cooked.

Loaded Potato Soup I

With not much time left before lunch, this recipe caught my eye. Microwaving the potatoes worked ok for me in a pinch. I stirred frequently and tossed them in a little butter to keep them from sticking together so much. I also sprinkled them with salt, pepper, & garlic powder for flavor. I used 1/2 milk & 1/2 chicken broth and added bacon and extra cheese. I liked the texture. Reviewers wanting more of a mashed potato texture might try mashing some of the potatoes before adding to the soup base.

Pumpkin Muffins II

Turned out great! I had to substitue pumpkin pie spice for some of the spices. I baked the pumpkin the night before, put the pulp in the fridge and made the muffins the next day with great results. I kept all the measurements the same and got 18 regular sized muffins out of it.

Roasted Asparagus and Mushrooms

Easy addition for our Thanksgiving meal. I threw in some carrots to make it more pleasing to my kids. Cooked at 400 for about 10 minutes and then turned the oven off to keep everything warm while I finished up some other dishes. Yum!

Pumpkin Nut Muffins

Good results with this one. I did a batch & one half to get 24 muffins. I found out I was low on sugar so I had to cut back by 1/3 of what was call for. The muffins were very moist. Next time I'll add a little salt & cloves and double the batch so I can fill the cups a little fuller. Great the next few days warmed in the microwave for a quick breakfast.

Roasted Vegetables

Very good! I cut my potato in small chunks and the more delicate veggies in larger ones. Halfway through I gave everything good stir and added some mushrooms. Baked for about 45 minutes total but I often have to extend the cooking time with my oven. I sprinkled some fresh parmesian on it, covered, and let it rest a few minutes before serving. Very good & looked pretty too.

Key Lime Pie I

This got rave reviews at our house! We were given a basket of key limes so I was able to use fresh squeezed lime juice. I cut a corner by using a pre-made graham cracker crust. I'm sure homemade would be better but the filling was so good it made up for it. I had to bake it a little longer than called for to get it to set up. I pulled it out of the freezer while we ate dinner and it was perfect to cut for dessert.

Amazing Pork Tenderloin in the Slow Cooker

Good results for me! My roast was tender & juicy. Everyone liked it. I cut back a bit on the wine & used Lipton onion mushroom soup mix because that is what I had on hand. I used corn starch to thicken the gravy. Served it with rice this time but next time I would definitely make mashed potatos to take advantage of the yummy gravy.

Chocolate Cavity Maker Cake

Followed the recipe exactly & with wonderful results! This is an extremely rich and moist cake that doesn't require frosting or glaze on top. A dusting of powdered sugar was perfect. This recipe tastes so much "harder" than it actually is to prepare.
