Enchiladas Suizas

Reviewed: Aug. 9, 2004
I am in absolute agreement with another reviewer that said stop reading the reviews, make this recipe and enjoy. The ONLY changes I made were due to lack of time. I bought a roasted chicken from Publix, shredded enough for the recipe and added ancho chile powder, cumin and salt to the shredded chicken. I did not have time to fry the tortillas so I simply added the filling, rolled them and topped with the salsa verde. Right before putting in the oven, I added the cream and topped with cheese. This is a delicious recipe and I will make over and over again. Thank you Lisa C!

Almond-Crusted Halibut Crystal Symphony

Reviewed: Aug. 13, 2005
I would give this recipe 10 stars! Worth the time and is guaranteed to please. I used grouper instead of halibut and doubled the sauce. I used tarragon vinegar and fresh tarragon in place of cider vinegar and thyme. I also used pecans because I didn't have almonds. Really great recipe. Thanks!

Adrienne's Tom Ka Gai

Reviewed: Jan. 8, 2005
I love this soup! Adrienne, you are a goddess of Thai cuisine! The only changes I made - used chicken broth instead of water, doubled the coconut milk and halved the fish sauce per other reviewers comments and added the cilantro in the last 5 minutes of simmer. Perfect!

Yum!!! I just made this for dinner and it was great. I was lazy and just simply marinated a flank steak for 1 1/2 days and then grilled. AWESOME!!!

Different and good. You could use any kind of veggies you have on hand. I don't like zucchini so I added roasted edamame. Yum!

Fresh Tomato Salsa

I agree with others, 5 serrano chiles is suicide! I used 4 (what was I thinking?) and next time I will reduce to 2. I like it hot but those babies are HOT! I also added 2 garlic cloves, pressed. Delicious and refreshing!

Rich and Creamy Beef Stroganoff

Reviewed: Sep. 10, 2012
Best beef stroganoff ever! I did a couple things differently. I did not marinade the beef and I browned in a dutch oven in 3 batches. I added the mushrooms with the onion and garlic and left them in the pot. Instead of simmering on the stove, I covered and braised in 325 oven for 1 hour 40 minutes. Very good!
