Feta Cheese Foldovers

Baja Fish Tacos

I live on the west coast of FL and fish tacos are a staple. I thought Rockaways had the best fish tacos until I made this recipe. I AM IN LOVE! I used grouper, 40% less sodium taco mix, used half the called for amount in the mayo/sour cream mix (otherwise too salty), sprinkled some cheddar cheese and served in flour tortillas. Absoulutely to die for!! Thank you!

Chicken and Lentils

Put all in the crockpot before bed and the wonderful smell woke me up at 5:30 in the morning. Used 14-oz can of pureed tomatoes instead of tomato sauce.

Breakfast Upside Down Cake

I changed the order of the ingredients and did not flip over the "cake" after it was done. I used sliced Simply Potatoes, fried to a golden brown, as the crust. Then I topped with the sauteed onions, pepper and garlic, then the bacon and cheese. I used 6 eggs and 1/2 cup half 'n' half. Delicious! Next time I will lightly salt the potatoes after they have fried.

Allie's Mushroom Pizza

Very good. I sauteed the mushrooms with fresh, pressed garlic before adding to pizza. I like this so much better than tomato sauce pizza. Thank you!

Parmesan-Black Pepper Arborio Rice Pilaf

Really good and easy. I added sauteed mushrooms and red and yellow peppers at the end with the parmesan. As another reviewer mentioned, use real parmesan cheese. A must!

Cabbage Jambalaya

Yummy! Hot and spicy. I used andouille instead of smoked sausage. Also used brown rice instead of white and added extra beef broth and a can of Rotel with the diced tomatoes. Added homemade cajun seasoning too. Awesome!

Trinidad Stewed Chicken

I would give this recipe 10 stars. Rarely do I find a recipe that I will make again and again. OMG this is good! I too omitted the water and added a whole can of coconut milk. Thank you!

Flank Steak a la Willyboy

The Best Meatballs

I made some minor changes but this recipe is a great start! I used ground turkey and italian sausage in place of beef, pork and veal. I used skim milk in place of the water and probably only used about 1/2 cup. I grilled the meatballs on foil pans, about 8-10 minutes before turning. Yummy!

Balsamic Vinaigrette

Very good, very simple. I recommend using salad oil instead of olive oil as olive oil tends to overtake a recipe. Like others, I added a tsp of sugar and herbs.

Pork Tenderloin alla Napoli

This is good! I seared the pork tenderloin on the grill, then put in a foil pan, covered with the sauce (no cream added yet)and heavy foil, moved to indirect heat for 30 minutes. I used canned tomatoes (only had Rotel), doubled the sauce and served over egg noodles.
