Easy and Delicious Chicken

I used bone-in breasts and reduced the initial cooking time to 4 hours as chicken tends to dry out in the slow cooker. I also added sauteed mushrooms and onions with the shredded chicken and cooked for an additional hour. I then added a healthy splash of dry cocktail sherry and a cup of frozen peas. Wrapped in puff pastry, baked in 375 oven for 35 minutes and the outcome was delicious! Lori

Cabbage Roll Casserole

Caramelized Baked Chicken

My chicken wings never caramelized. the sauce was anything but sticky and gooey. I turned up the heat to 450 degrees after the first 30 minutes. Wings still didn't caramelize so I removed from the pan after another 30 minutes, put into another without the sauce and broiled for 5 minutes. Got raves from my friends at our football party.

Cabbage Jambalaya

Yummy! Hot and spicy. I used andouille instead of smoked sausage. Also used brown rice instead of white and added extra beef broth and a can of Rotel with the diced tomatoes. Added homemade cajun seasoning too. Awesome!

Balsamic Vinaigrette

Very good, very simple. I recommend using salad oil instead of olive oil as olive oil tends to overtake a recipe. Like others, I added a tsp of sugar and herbs.

Won Ton Snacks

The best! Everyone I've ever made this for raves. I don't add water chestnuts or Thai peanut sauce. Instead I add fresh ginger, finely minced, along with finely chopped green cabbage. Add Thai sweet dipping sauce and hoisin to the mix once all the liquid is evaporated. Serve with Oriental Dipping Sauce.

Broiled Tilapia Parmesan

I changed this a bit. I omitted the butter and added a bit more light mayo. I also added finely chopped sun dried tomatoes (in oil, drained). I spread it on the fish and bake at 400. Fast, easy, delicious. A weeknight staple.

Baja Fish Tacos

I live on the west coast of FL and fish tacos are a staple. I thought Rockaways had the best fish tacos until I made this recipe. I AM IN LOVE! I used grouper, 40% less sodium taco mix, used half the called for amount in the mayo/sour cream mix (otherwise too salty), sprinkled some cheddar cheese and served in flour tortillas. Absoulutely to die for!! Thank you!
