Honey-Orange Marinated Salmon

This was ok, too much like many other salmon recipes. I added garlic to marinade. The cooking time is way off. 30-40 minutes is too long unless your fish is 6" thick. I did mine for 18 minutes and that was plenty of time.

Our Favorite Balsamic Vinaigrette

Wonderful vinaigrette. Used fresh garlic instead of powder. Didn't have shallots so used a 1/4 tsp onion powder.

Rich and Creamy Beef Stroganoff

Best beef stroganoff ever! I did a couple things differently. I did not marinade the beef and I browned in a dutch oven in 3 batches. I added the mushrooms with the onion and garlic and left them in the pot. Instead of simmering on the stove, I covered and braised in 325 oven for 1 hour 40 minutes. Very good!

Pumpkin Black Bean Soup

I did not puree the beans and I used fresh instead of canned. Soup needs to sit a day for the flavors to blend. Nice filling soup.

Hoisin-Ginger Beef Skewers

Yum!!! I just made this for dinner and it was great. I was lazy and just simply marinated a flank steak for 1 1/2 days and then grilled. AWESOME!!!

Mexican Style Cornbread

Good recipe. I couldn't find 8 oz can creamed corn so I just used the 14 oz and it turned out great. I also added about 2 tbsp sugar as cornbread should have a little bit of sweetness.

The Best Meatballs

I made some minor changes but this recipe is a great start! I used ground turkey and italian sausage in place of beef, pork and veal. I used skim milk in place of the water and probably only used about 1/2 cup. I grilled the meatballs on foil pans, about 8-10 minutes before turning. Yummy!

Grilled Sea Bass

Good seasoning on the fish. I seared fish in a little olive oil and then roasted in 425 oven. Finished with sqeeze of lemon instead of the olive oil.

Baked Dijon Salmon

I made this again tonight and upped my rating to 4 stars. I think this is really good and simple. I didn't melt the butter, just blended it with the mustard and honey. I would serve this to anyone who came to my home.
